Vada Pav (Indian Burger)



Vada Pav, is my favorite road side snack. I love to visit Maharashtra to have this authentic vada pav. I just wanted to recreate the same to fulfill my craving..specially in rainy season with a cup of tea. This is sweet, spicy and crunchy snack, this great combination of great flavors just burst in mouth. I hope you guys will try this out and enjoy this amazing snack.

Here comes the Recipe


Ingredients:

2 Cup Boiled Mashed Potatoes
½ tsp Turmeric
2 Pav Buns/Burger Buns
1 tsp Red Chili Powder
1 tsp Mustard Seeds
1 tbsp Oil
Oil for Deep Frying
1 tbsp Chopped Cilantro
1 tsp Butter
1 tsp Lime Juice
Salt to taste


For Batter

½ Cup Besan/Chickpea Flour
1 tsp Salt
1 tsp Ginger Garlic Paste
1 tsp Chopped Cilantro
2 tbsp Water


For Garnishing

1 tbsp Garlic Chutney
1 Fried Green Chili
1 tbsp Tamarind Chutney
1 tbsp Coriander Mint Chutney


Process:

1)  Heat a tbsp Oil in large skillet on medium high heat, Add in mustard seeds, turmeric powder, red chili powder, mashed potatoes and mix well. Then add in salt, lime juice and mix well. Let the mixture comes to room temperature.

2) Heat the Oil in large skillet on medium high heat to fry vada's. In a Big Bowl add in besan, ginger garlic paste, salt, cilantro and mix well with water to make a paste.

3) Divide potato mixture in medium sized balls and coat them well with besan mixture. Fry the balls till they turns to golden and crispy.

4) Now its the time to assemble vada pav. Heat up the pav with butter if you like and then spread coriander mint chutney on one side and tamarind chutney on the other side.

5) Then place vada on pav and press vada a little, then garnish with garlic chutney and fried chili.

White Chocolate Almonds Muffin



White Chocolate Almonds Muffin, are super moist muffins with goodness of white chocolate. Certainly i love to bake with white chocolate and that too when mixed with the batter, that makes them extremely moist and earthy. Also when almonds mixes with white chocolate makes them heavenly delicious. What else i can say about these muffins other than to suggest you guys to try for once.

Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Butter
2 Eggs
1 tsp of Vanilla
1 tsp Baking Powder
2 tsp Curd
2 tsp Sour Cream
¼ tsp of Salt
¼ Cup Milk
¼ Cup Powdered Almonds
½ Cup White Chocolate Chips


Process:


**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Muffin Pan.

1) Preheat your oven to 350F. Line muffin tin with liners and set aside.

2) In a bowl sieve the flour, Baking Powder, Salt, then mix with almond mixture and set aside.

3) Take a microwave safe bowl, add in Milk, White Chocolate Chips and microwave for a minute and mix till white chocolate combines well with milk.

4) In another bowl cream together the Butter and sugar until the mixture gets fluffy ,then add eggs one at a time and beat till the mixture gets lite and fluffy. Add vanilla extract, Curd and Sour Cream and mix well.

5) Add flour mixture into wet batter slowly alternate with Milk and Chocolate mixture.

6) Distribute the batter equally in muffin tin and bake for 25 mins..let them cool for 15 minutes...Enjoy!


Tips:

1) Don't over mix the batter.

2) Avoid Salt if using Salted Butter.

3) Sour Cream can be replaced with another 2 tsp Curd.

4) All the ingredients should be at room temperature.

Besan Bhindi(Okra)



Besan Bhindi, is really crispy and flavorful dish with the crunch of onions. I love okra since my childhood..and my mother used to make this specially for me quite frequently. Can be enjoyed with Tortilla, Indian Chapati.

Ingredients:

Serving: 2 Person

1 lb Roughly Chopped Okra
1 Sliced Medium Onion
1 tsp Red Chili Powder
1 tbsp Coriander Powder
1 tsp Dry Mango Powder
3 tbsp Oil
½ tsp Salt
2  tbsp Chickpea Flour/Beasn
2 tsp Water

Process:

1) Heat the Oil in large skillet on medium high heat. Take a bowl, add in Chickpea Flour, water,pinch of salt and mix well till become thick paste.

2) Coat chopped okra in above mixture well. Fry coated okra in small batches till becomes crispy.

3) Remove the fried okra from skillet and add in sliced onions in hot oil. Stir till onions becomes translucent.

4) Add in okra and all the dry spices like salt, red chili powder, coriander powder and dry mango powder and mix well.

5) Cook okra for 5 minutes with lid on medium low flame till all the spices are combined well with okra and onions.

6) Serve hot..Enjoy!

Dry Peanut Garlic Chutney


Dry Peanut Garlic Chutney, I love peanuts in just everything, So i just love this chutney.. that too with the flavor of garlic. This chutney goes with vada pav. In my upcoming post i will tell all my friends about the Indian burger i.e. "Vada Pav". Also this chutney i have with hot rice with a spoon of pure ghee(clarified butter)...Whaooo i just cannot resist that...So here comes the recipe..i hope you will also give this one a try and let me know your comments.

Here comes the Recipe

Ingredients:

1 Cup Roasted Peanuts
1 tsp Red Chili Powder
1 tsp Salt
2 Garlic Cloves
½ tsp Dry Mango Powder

Process:

1) Put  Roasted PeanutsRed Chili PowderSalt, Garlic, Cumin SeedsDry Mango Powder in a Mixer and pulse grind for 2-3 times to forms a coarse mixture.

2) Transfer that in a air tight container and store at cool place to keep it fresh...Enjoy!

Cappuccino Cake(Starbucks Special)


Cappuccino Cake, After karela recipe..i just though of making something sweet (Kuch Meetha Ho Jaye)..I love the flavor of cold coffee(specially starbucks Cappuccino Coffee),  So thought of making a cake with the same flavor. Here comes the recipe..hope you will enjoy trying and let me know the reviews..


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida

½ Cup Cold Coffee
1 tbsp Cocoa Powder
¼ tsp Cinnamon Powder
½ Cup Sugar
½ Cup Butter
2 Eggs
1 tbsp of Vanilla
1 tsp Baking Powder
3 tbsp Curd
¼ tsp of Salt
¼ Cup Choco Chips


Process:

1) Preheat your oven to 350F. Line square cake tin with parchment paper and keep it aside.

2) In a bowl sieve the flour, Cinnamon Powder, Cocoa Powder, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and Sugar until the mixture gets fluffy, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract, curd and mix well.

4) Add flour mixture into butter batter slowly alternate with cold coffee.

5) Pour the batter into cake tin. Then top with choco chips and bake for 45-50 mins, let that cool for 10-15 mins and Enjoy with the sprinkle of powdered sugar!


Tips:

1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) Salted butter can be used, In that case avoid salt.

3) All the ingredients should be at room temperature.

Aalu Karela (Mummy Style)


Aalu Karela, As i have told all you guys i went on vacation..and my mother made this karela dish for me..what i can say..it was super delicious. She is a great cook as she makes everything from her heart with the reflection of her love for us. She taught me how to make this and now i tried, it came out great. So here i am sharing this recipe ..i hope you will try this out and enjoy... This goes well with Indian Chapati, Tortilla,.

Here comes the Recipe for 


Ingredients:

Serving: 2 Person

8-10 Bitter Gourd
2 Medium Sliced Onion
Medium Chopped Tomatoes
2 tbsp Oil
1 tsp Salt
1 tsp Red Chili Powder
1 tsp Amchur( Dry mango Powder)
2  tbsp Coriander Powder
1 tsp Cumin Powder


Process:

1) Peal off bitter gourd skin and remove the seeds. Cut into halves if the bitter guards are big in size.

2) Rub bitter guards well in salt from inside as well as outside and let them rest for an hour at least. This is to remove enough bitterness from bitter gourd. After an hour wash bitter guards under running water.

3) Take a small bowl, add in cumin powder, chili powder, amchur, coriander powder and mix well. Fill in this mixture in all the bitter gourds and set them aside.

4) Heat the Oil in large skillet on medium high heat. Add in bitter gourds and stir fry for 5 minutes till they turn golden from outside.

5) Then add in sliced onion. Cook for 10 minutes on medium low flame and stir continuously.

6) After 10 minutes add in tomatoes and cook for another 10 minutes with lid.

7) Serve hot once bitter gourd turns soft and oil starts separates.....Enjoy!

Sabudana Cutlet




Sabudana Cutlet, This is one of the dish, myself and my brother used to wait for the day when my mother prepare these cutlets. My mother used to prepare this for navratri when we used to fast for the whole day(I know funny)
These are super yummy, crispy from outside with soft core just perfect on a rainy day. Try these, i am sure you will be addicted by these cutlets.

Ingredients:

1 cup of Sabudana
1 Cup Boiled Mashed Potatoes
1 tbsp Lime Juice
1 tsp Cumin Powder
½ tsp Red Chili Powder
1 tsp of Salt
¼ Cup Roasted Crushed Peanuts
Oil to Fry


Process:

1) Soak sabudana in water for atleast 2 hours. Then remove excess water from sabudana.

2) Preheat oil till hot to fry. Take a bowl and add in sabudana, potatoes, cumin powder, salt, red chili, lime juice, peanuts and mix well.

3) Once oil is hot enough to fry, then made any shape of cutlet as desired and fry till golden brown.

4) Serve with mint chutney.

Matar Mushroom



Matar Mashroomthis recipe is one of the most flavor full mushroom recipes i have tried till date. I bought this curry at my office and everyone was asking the recipe:) I prefer to serve this dish with tandori roti that too i make on regular gas stove that every body has in there home. I will share that soon, else this can be enjoyed with Rice, Roti or Tortilla.

Here comes the Recipe


Ingredients:

1 Cup Sliced Mushroom
½ Cup Peas
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 Large Onion Grated
1 tsp Red Chili Powder
1 tsp Salt
2 tsp Cumin Powder
2 tbsp Oil / Clarified Butter
1 tsp Garam Masala
1 tsp Kasuri Methi
Cilantro Leaves for garnish


Process:

1)  In a pan, heat the oil on medium flame and once hot add in the Ginger, Garlic and Onions.

2) Salt the Onion just a bit and cook till brown.

3) Add in Coriander powder, Cumin powder, Red chili powder and stir.

4) Add in Peas, Mushroom and cook it covered for 10 minutes at medium low flame.

5) Once done, garnish with Garam Masala, Kasuri methi and Cilantro...Enjoy with Rice, Chapatis, Parathas or Naan.
