Spinach Veg Fried Quinoa

Spinach Veg Fried Quinoa, Here's my version of flavored quinoa. We are making this Quinoa dish with alot many vegetables. So its a healthy and quick way to use make quinoa. Can be enjoyed as breakfast or tea time. Here we are using biryani masala, as per taste and availability one can use channa masala, pav bhaji masala etc.


Ingredients:

1 Cup Quninoa
1 tsp Biryani Masala
1 tbsp Oil
2 Cup Water
1 Cup Spinach
1 Medium Onion Sliced
1 Medium Tomato Sliced
¼ Cup Sweet Corn
¼ Cup Chopped Carrot
¼ Cup Peas
¼ Cup Chopped Beans
½ tbsp Chopped Green Chili
1  tsp Grated Ginger
½ tsp Red Chilli Powder
½ tsp Coriander Powder
1 tsp Biryani Masala
1 tsp Lime Juice
Salt as taste

Process:


1) Blanch Spinach with 2 cups water, let it cool for 10 minutes and grind.

2) Wash Quinoa, then boil Quinoa with spinach water. Add in salt and cook for 5 minutes until it boils.

3) Simmer the gas and cover the lid. Cook for 15 minutes. Turn off the heat and let it sit for 10 minutes.

4) Heat the Oil in large skillet on medium high heat.

5) Once Oil is hot, Add in Onion, Tomato, Beans, Green Chili, Grated Ginger, Peas, Carrot and sauté till cooked.

6) Add in Salt, Red Chilli powder, Coriander Powder, Biryani Masala, Then add in Quinoa and stir well and sprinkle lime juice.

7) Garnish with Cilantro as per you like...Enjoy with a cup of Tea!

Chickpea's Salad



Chickpeas Salad, This is a healthy and quick salad..i love to enjoy this after coming from office as a snack..you can enjoy this along with food. Also best way to serve your children requirement for raw salad.You can change vegetable with your own taste like grated cucumber etc.

Here Comes the Recipe

Ingredients:
Serving 2 Person
2 Cup Boiled Chickpeas
½ Cup Cucumber chopped
                                                             ½ Cup onion chopped
                                                              ½ Cup Tomato chopped
½ tsp Cumin Powder
½ tsp Chaat Masala
½ tsp Sugar
1/2 tbsp lime juice
½ tsp Green chili chopped Optional
Chopped Cilantro
Salt and Pepper as Taste


Process:


1) In a bowl, mix together boiled chickpeas, cucumber, onions, tomato, lime juice, salt, pepper, cumin powder, sugar, chaat masala, green chili chopped, cilantro.

2) Serve cold and Enjoy!!

Zucchini Savory Pancakes



Zucchini Savory Pancakes, These are healthy and delicious pancakes. Yes these pancakes are savory and versatile. You can replace zucchini with carrots or any vegetable you like. These are very quick and best to pack for kids lunchbox. This can be enjoyed with mint sauce or just regular ketchup.


Ingredients:

         1 Cup Shredded Zucchini   
          ¼ Cup Water           
1 Eggs Beaten
Salt and Pepper as taste
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
2 tbsp Oil


Process:

1) Take a bowl, add in Green Chili, Chopped Cilantro, Gram FlourSalt, Pepper, Egg, Water and mix well to dissolve all the lumps.

2) Preheat oil in flat griddle, with the help of spoon pour in the batter to make for any size. Cook from both sides until turns golden brown.

Enjoy hot!

Eggplant Parmesan (Quick Version)


Eggplant Parmesan, Recently i tasted this Italian recipe from my friend Anna. I would like to thank her to inspire me making this wonderful dish. This is my version of simple and quick Eggplant Parmesan. This is a bit tangy because of tomatoes, Cheesy because of mozzarella. And last but not the least Eggplant which is star of the dish. If you haven't tasted this recipe..i would suggest you to make it. You wont believe eggplant can taste something like this.

Ingredients: Serve 2 People

  ½ Cup Shredded/Sliced Mozzarella
½ Shredded Parmesan Cheese
12 Thin Slices of Eggplant
2 tbsp Oil
Salt to Sprinkle 



      Tomato Sauce:

1 cup Cherry Tomatoes
  ½ Cup Tomato Paste
1 Garlic finely Chopped
1 tsp Oregano/Italian Seasoning
1 tsp Dry Basil
1 tsp Dry Parsley
½ tsp Red Chili Flakes
½ tsp Sugar
½ tsp Black Pepper
Salt as Taste


Process:

1)     Preheat the oven to 350F. 

2)     Sprinkle Salt over eggplant Slices. Leave it for 15 minutes. Meanwhile preheat flat bottom skillet with oil. Once oil is hot , place eggplant slices over the pan with some distance in between. Cook eggplant slices on medium flame for 5 minutes each side.

3)     For Tomato sauce, take a pan with a tbsp of oil over medium heat, add in chopped garlic, once done, then add in cheery tomatoes and cook them covered for 10 minutes, then try to mash them when soften.

4)     Add in Tomato paste, Salt, Oregano, Red Chili Flakes, Sugar, Basil, Parsley, Black Pepper and cook it covered for another 10 minutes. Sauce is done.

5)     Take any baking dish, Spread 1 tbsp sauce at the bottom of the baking pan, then Place six slices of eggplant adjacent to each other. Then spread sauce over the eggplants, then sprinkle both the cheeses over that. Then place rest six slices stacking up the below eggplant slices. 

6)     Then spread rest of the sauce over then over that spread both cheeses.

7)     Bake them for 15-20 minutes, till cheese melted and it’s done. Enjoy with Plain Spaghetti or Garlic bread on the side.

                                                     Tips:
1) You can use Zucchini instead of Eggplant
2) You can use regular tomatoes instead of cherry tomatoes.

Pan Roast Chicken


Pan Roast Chicken, is a quick cheating for oven roast or tandoori chicken. I am sure you will not miss the crust you get in oven or tandoor. I would love to here from you guys that how much you liked this one.

Ingredients:

Thinly Sliced Chicken Breast
1 tsp Ginger Garlic Paste
1 tsp Tandoori Masala
1 tsp Red Chili powder
 1 tbsp Oil
1 tsp Salt
½  tsp Chat Masala
½  tsp Lime Juice


Process:


1) Take a large Bowl, Tandoori masala, Ginger Garlic Paste, Red Chili, 1/2 tbsp Oil, Salt, Lime Juice and mix well. Apply that well over chicken breast. Let it rest for atleast an hour.

2) Preheat your 1/2 tbsp oil in a flat pan. Let the pan be really really hot and then put the chicken over the pan and cover the lid. Let the flame be on max. Cook for 2-3 minutes on both sides with lid on.

3) Sprinkle chat masala over and serve with Mint Chutney and Salad.

Hara Bhara Kabab


Hara Bhara Kabab, are full of amazing flavors. This is super healthy starter dish..great to rock any party. Great for fussy kids who doesn't eat greens. These are super soft just melts in mouth with crusty top. Goes great as starter with tamarind chutney or coriander mint chutney. I hope you all will try these kabab's and love this.

Ingredients:

250gm Arugula/Spinich Blanched
½ Cup Grean Peas Blanched
½ Cup Beans Blanched
½ Cup Boiled Mashed Potatoes
¼ Cup Cottage Cheese
1 tsp Lime Juice
1 tsp Cumin Powder
½ tsp Red Chili Powder
Bread Crumbs as required
1 tbsp of Salt
¼ Cup Chopped Cilantro
Oil to Shallow Fry
Cashews and Almonds as required


Process:

1) Blend blanched Arugula/Spinich, Peas, Beans with lime juice in blender to make paste. Take that paste in a bowl then add in cottage cheese, mashed potatoes, almonds, salt, red chili powder, cumin powder and mix well.

2) Add in bread crumbs if needed. Now to make kabab take a big lemon size ball of mixture and make any shape then put cashew over the top and press a bit.

3) Take a flat nonstick skittle. Heat the oil in a pan, once oil is hot add in kabab's and fry from both sides till they turn golden brown from both sides.

4)  Now kabab's are ready, Serve with Onion and chutney.

Paneer Kulcha Sandwich


Paneer Kulcha Sandwich, this is a amazing twist to our plain Kulcha's. As i am outside my home country and was missing them badly. I know, it looks like a big task but trust me its not. Goes great with Coriander Chutney or ketchup. So, please try this recipe and lemme know how you liked it.


Ingredients:

2 Kulcha
1 Cup Cottage Cheese
½ tsp Cumin Powder
1 tsp Cumin Seeds
1 Finely Chopped Green Chili
1 Onion Chopped
½ tsp Salt
½  tsp Chat Masala
1 tbsp Chopped Cilantro
1 tsp Oil


Process:


1. Heat oil in a pan on medium high flame, add in cumin seeds and onion. Stir till onion turns translucent. Then add in cottage cheese, cumin powder, green chili, salt, chat masala, cilantro and mix well. 

2. Take 2 kulcha's and then sandwich paneer stuffing in between kulcha's. 

3. Now take few drops of oil and roast sandwich from both sides.

Enjoy with cup of tea....

Moong Daal Vada (Laddu)



Moong Daal Vada (Laddu), i know delhi people would know how yummy is this one. Here's the delicious Moong Dal laddu's. This is a perfect snack in rainy weather best served with Grated raddish and mint chutney. Hope you would love to try this.


Ingredients:

1 Cup Moong Dal without skin
           2 tbsp Rice Flour              
¼ Cup Water
½ tsp Salt
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
1 tsp Chopped Ginger
1 tsp Cumin Seeds
1 tsp Fennel Seeds
Pinch of Hing
Pinch of Baking Soda
1 Chopped Onion
Oil for Deep Frying
1 tbsp Chopped Curry Leaves
 2 tbsp Chopped Cilantro


Process:

1) Soak Moong Dal for atleast 3 hours.

2) Take a grinder, add in soaked Moong Dal and grind well with water till becomes coarse paste. Add water slowly as per required.

3) Add in Cumin Seeds, Fennel Seeds, Salt, Rice Flour, Chopped Cilantro, Curry Leaves, Onion, Baking Soda, Hing, Ginger and mix well.

4) Heat up Oil for frying on medium flame. Make any shape vada's and fry them till turn golden brown....Enjoy hot!

Chicken Kabab




Chicken Kabab, are full of amazing flavors. A wonderful friend taught me this recipe and i love her for that. Thanks Sanjukta. These are super soft just melts in mouth with crusty top. Goes great as starter with tamarind chutney or coriander mint chutney.I hope you all will try these kabab's and love this.

Ingredients:

2 Cup Minced Chicken
1 tsp Lime Juice
1 tsp Cumin Powder
½ tsp Red Chili Powder
2 tbsp Ginger Garlic Paste
1 tbsp Garam Masala
2-3 tbsp Bread Crumbs
1 tbsp of Salt
¼ Cup Chopped Cilantro
¼ Cup Chopped Cashews
1 Egg
1/2 Cup Bread Crumbs
Oil to Shallow Fry


Process:

1) Cook Chicken and Ginger Garlic paste in a pan till chicken cooks and dry.

2) Take chicken in a big bowl and salt, cilantro, lime juice, Cashews, Cumin Powder, Garam Masala, Red Chili Powder, 2-3 tbsp bread crumbs and mix well.

3) Now to make kabab take a big lemon size ball of mixture. Take a flat nonstick skittle. Heat the oil in a pan, once oil is hot add in kabab's and fry from both sides till they turn golden brown from both sides.

4)  Now kabab's are ready, Serve with lemon and cilantro.

Potato Tots




Potato Tots, is one of my favorite tea time snack. These are blast of flavors with crispy and flaky crust. When i made them myself couldn't resist eating them and we wanted more and more. They are crunchy with the burst of flavors. I hope you will try them and let me know how you really liked them.

Ingredients:

1 Cup Boiled Mashed Potatoes/Cottage Cheese
1 Cup Raw Potatoes Grated 
1 tsp Red Chili Powder
2 tbsp Rice Flour/ All Purpose Flour
1/4 Cup Water
1 tsp chopped Green Chili
1 tsp Chaat Masala 
Oil for Deep Frying
1 tbsp Chopped Cilantro
Salt to taste


Process:

1)  In a Big Bowl add in mashed potatoes, green chili, salt, red chili powder, chaat masala, cilantro and mix well till combined. Partially boil grated Potatoes till they slightly soften and mix with above mixture.

2) Make rolls of tots shape and keep them aside. Take a bowl add in flour, water, salt and mix well.

3) Heat the Oil in large skillet on medium high heat to fry tots. 

4) Dip tots into flour batter and fry till they turns golden brown.

5) Enjoy cutlets with Chili Tomato Chutney.

Egg Chop



Egg Chop, has become one of my favorite tea time snack.They are crunchy with the sift flavorful core with the goodness of boiled egg and flavorful potato mixture. I hope you try them and let me know how you really liked them.


Ingredients:

2 Cup Boiled Mashed Potatoes
1/2 Cup Copped Roasted Peanuts
1 tsp Red Chili Powder
1 tsp Coriander Powder
2 tbsp All Purpose Flour
1 tsp chopped Green Chili
1 Cup Rice Flour/ Maida
1/2 Cup Bread Crumbs
2 Boiled Eggs
1 Beaten Egg
1 tsp Chaat Masala 
Oil for Deep Frying
1 tbsp Chopped Cilantro
Salt to taste


Process:

1)  In a Big Bowl add in mashed potatoes, green chili, salt, red chili powder, chaat masala, coriander powder, peanuts, cilantro and mix well till combined.

2) Heat the Oil in large skillet on medium high heat to fry Egg Chops. 

3) Cut boiled egg in half then coat potato mixture all around boiled egg. Then Dip the chop in beaten egg and then at last coat with bread crumbs.

4) Fry them on medium heat till that turns golden brown in color.

Sweet n Spicy Shrimps



Sweet n Spicy Shrimps, is a recipe with beautiful flavors. Its has tangy sweet taste goes great as starter. Its an accidental recipe that came out great. I try to always put some variation in everyday dishes. This recipe is very simple and quite flavorful dish that fills the pallet with amazing flavors. 

Ingredients:

16 Oz Shrimps
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 tsp Soya Sauce
1 tbsp Ketchup
1 tsp Vinegar
1 tbsp Oil
1 tbsp Sugar
½ tsp Cornflour
1 tsp Red Chili Powder
1 tbsp Chili Sauce
Salt and Pepper as taste


Process:

1) In a bowl mix well Soya Sauce, Ketchup, Vinegar, Corn flour, Sugar, Chili Sauce and mix well.

2) In a pan, heat the oil on medium flame and once hot add Ginger and Garlic, saute till turns light brown. Then add in sauce mixture and still continuously.

3) Add in Shrimps and cook on full flame. Stir fry shrimps with sauces until shrimps cooks through. Add in Salt, Pepper and red chili powder, Mix well and serve hot.

Zucchini French Toast




Zucchini French ToastHere's the healthy and very delicious breakfast recipe. I love to make them on a rainy day. Can be enjoyed with ketchup.


Ingredients:

¼ Cup Chickpea Flour
1 Cup Shredded Zucchini              
2 Eggs Beaten
¼ tsp Baking Powder
4 Bread Slice
Salt and Pepper as taste
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
1 tsp Grated Ginger
2 tbsp Oil


Process:

1) Take a bowl, add in Green Chili, Chopped Cilantro, Chickpea flour(Besan), Baking Powder, Salt, Pepper, Eggs and mix well.

2) Pre heat oil in flat griddle, Spread the batter over one side of bread and place the bread over the griddle upside down i.e. batter side over the griddle first. Flip when cooked and roast the bread from other side.

Enjoy hot!

Indian Zucchini Fitters



Indian Zucchini FittersHere's the healthy and very delicious Indian style fitters. I love to make them on a rainy day. Can be enjoyed with Ginger Pickle, Peanut Chutney posted on the blog.


Ingredients:

              1 Cup Shredded Zucchini              
¼ tsp Baking Powder
Salt and Pepper as taste
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
1 tsp Grated Ginger
2 tbsp Oil


Process:

1) Take a bowl, add in Green Chili, Chopped Cilantro,Ginger, Chickpea flour(Besan), Baking Powder, Salt, Pepper and mix well.

2) Preheat oil in flat griddle, with the help of spoon pour in the batter little distance apart. Cook from both sides until turns golden brown.

Enjoy hot!

Begun Bhaja (Eggplant Fry)




Begun Bhaja, is known to be a Bengali dish and these days i am under Bengali cooking influence. These are served with rice and ghee(clarified butter). This is spicy and crunchy side dish or snack with soft center. I hope you guys will try this out and enjoy this amazing snack.


Ingredients:

Eggplant Slices
½ Cup Besan/Chickpea Flour
Oil for Deep Frying
1 tsp Cornflour
1 tsp Salt
1 tsp Ginger Garlic Paste
2 tbsp Water


Process:

1) Heat Oil in large skillet on medium high heat to fry eggplant. In a Big Bowl add in besan, ginger garlic paste, salt and mix well with water to make a paste.

2) Dip eggplant slices in batter and fry till they turns to golden and crispy.

Falafel


Falafel, my all time favorite Mediterranean dish. I love to have falafel sandwich anytime of the day. Who doesn't know this in India. These are crunchy from outside and soft from center. Try this with hummus in pita bread. Pita bread recipe i will post soon. 

                     Ingredients:
1 Cup Overnight Soaked Chickpeas 

4-5 Cloves Garlic
1 Big Onion Chopped
1 tsp Sesame Seeds
1 tsp Lime Juice
1 tbsp Green Chili paste
Oil for Deep Frying

1 tsp Baking Powder

1 tsp Cumin Powder

1 Bread Slice

1 tbsp Coriander Powder
1 Cup Chopped Cilantro/Parsley
Salt and Pepper as Taste

Process:
1)  Put chickpeas, sesame seeds, lime juice, salt, pepper, cumin powder, coriander powder, Baking powder, bread slice, green chili, garlic and cilantro in food processor to make course mixture. 
2)  Add 1/2 cup water in the mixture and pulse again in food processor. Now you will get a mixture that is suitable to make a ball that stay a single piece.
3)  Now make small balls out of the mixture, as a tip i can say that you can use ice cream scoop to make equal sized balls.
4)  Fry balls in preheated oil till they turn golden brown in color. If you see the mixture is not sticking together once you put in oil for frying then little All Purpose Flour can be used to mix in the mixture.

Chicken Roll


Chicken Roll, is a wonderful masaledar dish includes a parantha with chicken filling. I try to always put some variation in everyday dishes. This recipe is very simple and quite flavorful dish that fills the pallet with amazing flavors. Goes great for lunch or dinner.

Ingredients:

Filling:
16 Oz Chopped Chicken
½ Cup Curd
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 tsp Red Chili Powder
1 tbsp Chili Sauce
1 tbsp Tomato Ketchup/ Hot and sweet Maggie Sauce
1 tsp Salt
1 big Onion Sliced
1 tbsp Chaat Masala
1 Cup Green Bell Pepper Sliced
2 tbsp Oil 
½ tsp Garam Masala
Cilantro Leaves for garnish

Parantha:
1 Cup Wheat Flour
1 tsp Salt
1 tsp Oil
Water to Kneed Dough


Process:

1) Take a bowl, Add in Flours, Salt, Oil and mix well. Kneed with water to make a medium hard consistency. Let the dough rest for half an hour. Then take a flour ball and roll to make parantha. Cook on both sides with little bit oil.

2) In a bowl marinate Chicken with Curd, Garam Masala, Ginger, Garlic, Salt, Coriander powder, Ketchup, Chili Sauce. Let the marinate rest for an hour at leastIn a pan, heat the oil on medium flame and once hot add in the marinated chicken.

3) Cook covered on medium high flame till chicken cooks and liquid evaporated to becomes a bit dry. Stir in between to prevent from sticking at the bottom.

4) Add in sliced onions and bell pepper. Stir well and cook for another 5 minutes.

5) Once done, Take parantha put some chicken inside. Garnish with Cilantro and Chaat Masala, Roll and serve.

Healthy Puffed Rice Snack



Healthy Puffed Rice Snack, is my other favorite way to eat puffed rice with beautiful and simple flavors. I would love to share one of my favorite munching snack recipe but you will not miss the idea of having chips as this is really a burst of flavors. So i request you all to try this and don't miss it any further.


Ingredients:

2 Cup Puffed Rice
2 tbsp Roasted Peanuts
1 tbsp Chopped Green Chili
1 tsp Lime Juice
2-3 Crushed Puri's
Cilantro for Granish
2 tbsp Finely Chopped Onions
Salt,Chat Masala and Red Chili to Sprinkle


Process:

1) Take a bowl, add in Puffed Rice, Peanuts, Green Chili, Puri's, Salt, Chaat Masala, Onions, Red Chili Powder and mix well. 

2) Just before serving add in lime juice and mix well.

3) At last garnish with cilantro and Enjoy!

Potato Cutlets



Potato Cutlets, is one of my favorite tea time snack. This is another version of Bread Roll posted on my blog. But with the same ingredients these taste altogether different....They are crunchy with the burst of flavors. I hope you will try them and let me know how you really liked them.

Here comes the Recipe


Ingredients:

2 Cup Boiled Mashed Potatoes
4 Bread Slices
1 tsp Red Chili Powder
1 tsp Coriander Powder
1/2 Cup Finely Chopped Onions
1/2 Cup Finely Chopped Bell Pepper
2 tbsp Rice Flour/ All Purpose Flour
1 tsp chopped Green Chili
1 Cup Corn Meal
1 tsp Chaat Masala 
Oil for Deep Frying
1 tbsp Chopped Cilantro
Salt to taste


Process:

1)  In a Big Bowl add in mashed potatoes, green chili, salt, red chili powder, chaat masala, coriander powder, onions, bell pepper, cilantro and mix well till combined.

2) Heat the Oil in large skillet on medium high heat to fry Cutlets. 

3) Cut the bread pieces round with the help of cookie cutter.Take some water in a bowl, dip the bread slightly in water and squeeze water. The purpose is only to moist the bread to roll bread. 

4) Divide potato mixture in medium sized balls and put potato mixture in the middle of one bread slice and cover with the another bread slice. With the help of hands join two bread slice edges as shown in the above picture.

5) Coat the cutlets in corn meal and Fry them on medium heat till that turns golden brown in color.

Indian Style Omelet



Indian Style Omelet, many people ask about how to make a perfect. There are few tips need to keep in mind. Eggs need to be fresh, flame should be medium low. I am making indian style omelet with Indian spices and veggies.


Ingredients:

2 Boiled Eggs
1 tsp Ginger Garlic Paste
1 tsp Cumin Powder
1 tsp Green Chili
1 tsp Milk
½ Small Onion Chopped
2 tbsp Chopped Bell Pepper
½ tsp Red Chili Powder
1/4 tsp Garam Masala
Salt to Taste
1 tbsp Oil / Clarified Butter
Cilantro Leaves for garnish


Process:

1) Take a bowl add in eggs, milk, salt, red chili powder, garam masala, cumin powder and whisk well till frothy.

2) Add in onion, bell pepper, cilantro, green chili and mix well.

3) In a flat surface pan, heat up oil on medium flame and once hot pour egg mixture in a pan.

4) Let omelet cook for sometime and then flip and cook for just a minute to have a soft and fluffy omelet.
