Karela Bhurji (Bittergourd Dry Curry)


Karela Bhurji, This is by far my favrt recipe when we talk about bitter guard..not so bitter anymore :). I request everybody to try this recipe, this may actually turns out to be one of your favorites...I just hope. So please give this a try and let me know your views. This goes well with Indian Chapati, Tortilla,.


Ingredients:

1 Kg Bitter Gourd
2 tbsp Mustard Oil
1 tbsp Salt
1 tsp Turmeric Powder


Spices Mix

 7-8 Medium sized Garlic Cloves
1 tsp Chana Dal
1 tsp Udat dal
8-10 Kadi Leaves
1 tsp Coriander Seeds
1 tsp Cumin Seeds
1 tsp Fennel Seeds
1 tbsp Tamarind


Process:
1) Dry roast all the whole spice mix together in an pan and grind them in a coarse powder.

2) Chop Bitter Guard in small pieces and remove the seeds. Wash bitter guard properly under cold water.

3) Rub bitter guards well with salt and turmeric, leave it for half an hour at least. Now squeeze bitter guard pieces to remove bitterness and now they are all set for use.

4) Heat Oil in large skillet on medium flame. Add in bitter guard and saute until it turns dark brown, then add in dry spice mix powder and stir for 2-3 minutes.

5) Cook for 5 minutes on medium low flame with lid.

6) Serve hot.....Enjoy!

Chickpea's Salad



Chickpeas Salad, This is a healthy and quick salad..i love to enjoy this after coming from office as a snack..you can enjoy this along with food. Also best way to serve your children requirement for raw salad.You can change vegetable with your own taste like grated cucumber etc.

Here Comes the Recipe

Ingredients:
Serving 2 Person
2 Cup Boiled Chickpeas
½ Cup Cucumber chopped
                                                             ½ Cup onion chopped
                                                              ½ Cup Tomato chopped
½ tsp Cumin Powder
½ tsp Chaat Masala
½ tsp Sugar
1/2 tbsp lime juice
½ tsp Green chili chopped Optional
Chopped Cilantro
Salt and Pepper as Taste


Process:


1) In a bowl, mix together boiled chickpeas, cucumber, onions, tomato, lime juice, salt, pepper, cumin powder, sugar, chaat masala, green chili chopped, cilantro.

2) Serve cold and Enjoy!!

Boondi Curry


Boondi Curry, is very quick and delicious curry. This is very much staple in my house..this is what my mother makes when she doesnt have alot of time and still she wants to serve best to my us. This boondi you can get from any Indian store. This curry can be enjoyed with Rice, Roti or Tortilla...Here comes the Recipe


Ingredients:

1 Cup Boondi
2 Cup Water 
1 tbsp Minced Garlic
2 Big Tomatoes finely chopped
1 tsp Jeera/ Cumin Seeds
1 tsp Red Chili Powder
1 tsp Turmeric Powder
1 tbsp Oil / Clarified Butter
1 tsp Garam Masala
Salt as per Taste
Cilantro Leaves for garnish


Process:

1)  In a pan, heat the oil on medium flame and once hot add in the Cumin seeds, when cumin gives the fragrance then add in finely chopped Garlic And cook until garlic turns a bit brown.

2) Add in tomatoes, Salt and cook till tomatoes soften and oozes out oil.

3) Add in Coriander powder, Turmeric powder, Red chili powder and stir.

4) Add in Water, Once water starts boiling then add in Boondi and switch off the flame, cover the lid and let it rest for 10 mins.

5) Once done, garnish with Cilantro...Enjoy with Rice, Chapatis, Parathas or Naan.

Paneer Kulcha Sandwich


Paneer Kulcha Sandwich, this is a amazing twist to our plain Kulcha's. As i am outside my home country and was missing them badly. I know, it looks like a big task but trust me its not. Goes great with Coriander Chutney or ketchup. So, please try this recipe and lemme know how you liked it.


Ingredients:

2 Kulcha
1 Cup Cottage Cheese
½ tsp Cumin Powder
1 tsp Cumin Seeds
1 Finely Chopped Green Chili
1 Onion Chopped
½ tsp Salt
½  tsp Chat Masala
1 tbsp Chopped Cilantro
1 tsp Oil


Process:


1. Heat oil in a pan on medium high flame, add in cumin seeds and onion. Stir till onion turns translucent. Then add in cottage cheese, cumin powder, green chili, salt, chat masala, cilantro and mix well. 

2. Take 2 kulcha's and then sandwich paneer stuffing in between kulcha's. 

3. Now take few drops of oil and roast sandwich from both sides.

Enjoy with cup of tea....

Custard Cake


Custard Cake, this cake is super soft and melting mouth. This is more like Britannia cake we have in india. You can add any flavor like lime or orange, also you can add some nuts or cherry in the cake to flavor cake. Here comes the recipe..hope you will enjoy trying and let me know the reviews..


Ingredients:

1 ¼ Cup of All Purpose Flour/ Maida
1 Cup Sugar
1 tbsp Custard Powder
½ Cup Oil
¼ Cup Curd
3 Eggs
1 tbsp of Vanilla
1 tsp Baking Powder
¼ tsp of Salt


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf tin with parchment paper and keep it aside.

2) In a bowl sieve the Flour, Baking Powder, Salt, Custard Powder and set aside.

3) In another bowl mix together the Oil, Eggs, Vanilla, Curd and Sugar until everything well combined and beat till the mixture gets lite and fluffy.

4) Add flour mixture into liquid batter slowly.

5) Pour the batter into cake tin. Bake for 50-60 mins, let that cool for 10-15 mins and Enjoy with ta cup of coffee.


Tips:

1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Kulcha (Yeast Free)


Kulcha, this is something people buy from market if they make "Matar kulcha" at home, but , I decided to make myself. I know, its a bit of the work behind making bread at home but, trust me the fresh bread is no where near to the market brought bread. So, please try this recipe and lemme know how you liked it.

Here comes the Recipe


Ingredients:

1½ Cup All Purpose Flour/ Maida
½ Cup Yourt
1 tsp Baking Powder
1 tsp Baking Soda
1 Tbsp Minced Garlic/Garlic Powder
1 tsp Sugar
1 tsp Salt
1 tbsp Lemon juice
½ Cup Lukewarm Water
Butter for Garnish
Chopped Coriander for Garnish


Process:

**Tools Used: Bowl, Flat Pan.

1) Take a bowl with flour in and add baking powder, baking soda, sugar, salt and mix well.  Then add in curd and mix softly with hands. Then slowly add in water to just combine the flour. Don't kneed the dough and just try to make a a lump of dough.

2) Now add in lemon juice to the dough and try to mix in the dough.

3) Cover the dough and let it rest for at-least four hour. Then after you will observe the dough turns double i.e fermented. Now make equal size round balls.

4) Now roll the balls with rolling pin to make any shape you like with the help of dry flour then apply mincced garlic and coriander leaves over that.

5) Heat up the non stick pan on medium high flame. Cook naan over the pan. You will observe the naan fluff up then its the time to flip that and cook from the other side too.

Apply butter over that and Enjoy!!

Aalu Karela (Mummy Style)


Aalu Karela, As i have told all you guys i went on vacation..and my mother made this karela dish for me..what i can say..it was super delicious. She is a great cook as she makes everything from her heart with the reflection of her love for us. She taught me how to make this and now i tried, it came out great. So here i am sharing this recipe ..i hope you will try this out and enjoy... This goes well with Indian Chapati, Tortilla,.

Here comes the Recipe for 


Ingredients:

Serving: 2 Person

8-10 Bitter Gourd
2 Medium Sliced Onion
2 Medium Chopped Tomatoes
2 tbsp Oil
1 tsp Salt
1 tsp Red Chili Powder
1 tsp Amchur( Dry mango Powder)
2  tbsp Coriander Powder
1 tsp Cumin Powder


Process:

1) Peal off bitter gourd skin and remove the seeds. Cut into halves if the bitter guards are big in size.

2) Rub bitter guards well in salt from inside as well as outside and let them rest for an hour at least. This is to remove enough bitterness from bitter gourd. After an hour wash bitter guards under running water.

3) Take a small bowl, add in cumin powder, chili powder, amchur, coriander powder and mix well. Fill in this mixture in all the bitter gourds and set them aside.

4) Heat the Oil in large skillet on medium high heat. Add in bitter gourds and stir fry for 5 minutes till they turn golden from outside.

5) Then add in sliced onion. Cook for 10 minutes on medium low flame and stir continuously.

6) After 10 minutes add in tomatoes and cook for another 10 minutes with lid.

7) Serve hot once bitter gourd turns soft and oil starts separates.....Enjoy!

Karela Sabzi (Bitter Gourd)



Karela Sabzi, I know, not many people love bitter gourd because of its bitterness. But here through this recipe i am going to share the tip that removes the strong bitterness attached with bitter gourd and leaves enough flavor behind. Ingredients:

Serving: 2 Person

8-10 Bitter Gourd
1 Medium Sliced Onion
1 tsp Ginger Garlic Paste
1 tbsp Oil
1 tsp Salt
1 tsp Amchur( Dry mango Powder)
1  tbsp Coriander Powder
1 tsp Cumin Powder
2 tbsp Water
2 tbsp Milk


Process:

Chinese Tofu



Here's the quick and flavorful side dish/Snacks. This healthy dish made from Tofu and Veggies. Can be enjoyed with Tortilla, Indian Chapati.

Ingredients:

Serving: 2 Person

8 Oz Extra Firm Tofu
1 Medium Onion
1 Small Green Capsicum
1 tsp Ginger Garlic Paste
1 tbsp Oil
½ tsp Salt
½  tsp Chili Sauce
1 tsp Vinegar
1  tsp Soya Sauce
2 tbsp Tomato Ketchup

Process:

1) Cut Tofu into bite size pieces.

2) Heat the Oil in large skillet on medium high heat.

3) Chop Green Capsicum, Tomato and Onion in big sized pieces.

4) Once Oil is hot, Add in Green Capsicum and Onion.

5) Stir continuously till  Green Capsicum and Onion turns glossy. Add in Ginger Garlic Paste, Chili Sauce, Salt, Vinegar, Soya Sauce and Tomato Ketchup. Stir continuously to mix well for 5 minutes.

6) Add in Tofu cubes and stir gently without breaking Tofu.

7) Serve hot..Enjoy!
