Fruitcake Cookies



Fruitcake Cookies, These cookies are full of nuts and fruit cake flavor but in the form of cookies. these are soft yet crunchy cookies. I have prepared these cookies with grape juice but as traditional fruitcake, you can make these with rum or sherry. These are very simple and quick cookies. Try this and let me know if you liked.

                   Ingredients:
1/2 Cup dried figs
1/4
 Cup raisins
1 tbs honey
2 tbs Grape Juice
1 tbs freshly squeezed lemon juice
1/2 Cup chopped Walnuts 
Kosher salt
2 sticks/1 Cup unsalted butter, at room temperature
1/2 tsp ground cloves
1/2 cup superfine sugar
1/3 cup light brown sugar, firmly packed
1 egg
2 2/3 cups all-purpose flour

Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)  Preheat the oven to 350F. Grease the cookie pan with butter and cover the bottom with butter paper.

2) Take a big bowl, add in nuts, dry fruits and grape juice. mix well and store for few hours or over night.
3)  Cream together butter, refined sugar, brown sugar, grounded clove till mixture turns lite and fluffy. Add in egg and beat well incorporated.

4)  Add in all purpose flour and salt. Mix well until incorporated. Don't over mix the dough.  At last fold in dry fruit and nut mixture in the dough. Roll the dough in parchment paper and let it rest for an hour at least in refrigerator. 
5)   Cut and spread cookies into 2 to 3 inch circles about 1/2-inch thick. Bake them for 20-25 minutes until light golden. Let them cool.
Enjoy!!
Tips:
1) Don't over mix the batter.

2) This Cookie dough can be stored in deep fridger for later use. I have rolled the dough in parchment paper and stored the same.

3) Use nuts of your choice.

Crispy Almond Cookies




Crispy Almond Cookies, These cookies are my favorite Cookies. These are buttery 
& crispy goes best at tea time with the goodness of almonds. These are very simple and quick cookies. Try this and let me know if you liked.

              Ingredients:
½ cup of All Purpose Flour/ Maida
¼ Cup Sugar
 1 Egg
   ¼ tsp Salt
 4 tbsp Butter
½ Cup Almond Flakes

Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)     Preheat the oven to 400F. Grease the cookie pan with butter and cover the bottom with butter paper.
2)     In a bowl sieve flour, Sugar and Salt. Beat in Egg and melted Butter until well incorporated.

3)     Spoon out batter, about 1/2 a tablespoon at a time, onto a parchment lined baking sheets. Spread cookies into 2 to 3 inch circles about 1/8-inch thick. 
4)     Sprinkle almond flakes over cookies and Bake them for 10-12 minutes. Let them cool.

Tips:
1) Don't over mix the batter.

Caraway(Ajwain) Cookies


Caraway(Ajwain) Cookies, This recipe of my all-time favorite Caraway(Ajwain) Cookies. These are buttery 
& flaky goes best at tea time. I am big time ajwain cookies fan since childhood and my mother used to bring it oftentimes for me:) So i just tried them make at home and they came out really well. Try this and let me know if you liked.

              Ingredients:
1½ cup of All Purpose Flour/ Maida
1½ tbsp Sugar
 1 Cup Butter
  ½ tsp Salt
 ½ tsp Baking Powder
   ½ Cup Warm Water
1 tbsp Curd
1tbsp Caraway Seeds

Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)     Preheat the oven to 350F. Grease the cookie pan with butter and cover the bottom with butter paper.
2)     In a bowl sieve flour, baking powder and Salt. We will call it Bowl 1 from now onwards.
3)     In another bowl mix together the Butter and sugar until the mixture gets fluffy and then add in Curd, Caraway seeds and mix well with the help of spatula. Let’s call it Bowl 2.
4)     Add in flour mixture into butter mixture (i.e. Bowl 1 to Bowl 2) and fold it well with spatula until everything’s get well incorporated.
5)     Add in milk little by little and mix well. Arrange cookie dough on baking sheet with help of small sized ice cream scoop leaving enough space in between cookies.
6)     Bake them for 25-30 minutes and it’s done.

Tips:
1) Don't over mix the batter.

Chocolate Walnut Bars





Chocolate Walnut Bars, Here's a chocolaty twist to walnut cookies.I usually prefer to make cookie dough in a big batch and bake fresh to retain crunch in cookies and freshness of walnuts. Deep freeze the cookie dough to preserve dough. Try to use this flavoufull dough with your innovation and let me know individual thoughfull ideas.

            Ingredients:
2 cup of Walnut Cookie Dough
 Walnut Pieces for Decoration
½ Cup Sweetened Condensed Milk
         Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)     Preheat the oven to 350F. Grease the 9 by 5 inch baking pan with butter and cover the bottom with butter paper.
2)     Spread cookie dough through out the pan evenly and bake for 20 minutes.
3)     Mean while lukewarm the condensed milk and put chocolate chips in condensed milk, let it rest for 5 minutes. Then stir well with the help of whisk to remove all the lumps.
4)     Spread chocolate mixture evenly over the halved baked cookie dough and place walnut pieces over the chocolate mixture. Bake for another 40 minutes.
5)     Let the cookie bars rest for an hour and then after cut in pieces.

Walnut Cookies



Walnut Cookies, is my all-time favorite Walnut cookies. As soon as you bite one, it breaks up into small granules in your mouth. With every grind you feel the rich flavor of Walnuts oozing out. When made to perfection, they attain the much desired granulated texture due to added Walnut powder. I would suggest you to savor each one by serving them warm with any hot beverage (Not in Sheldon Cooper’s Way though).

Ingredients:
3 cup of All Purpose Flour/ Maida
1 Cup Sugar
 1 Cup Butter
 1 tsp of Vanilla Extract
 1 tsp Almond Extract
 3 tbsp Warm Water
1 Cup Chopped Walnuts
½ Cup Walnut Powder

Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)     Preheat the oven to 350F. Grease the cookie pan with butter and cover the bottom with butter paper.
2)     In a bowl sieve flour and Salt. We will call it Bowl 1 from now onwards.
3)     In another bowl mix together the Butter and sugar until the mixture gets fluffy and then add vanilla extract, almond extract and warm water. Mix well. Let’s call it Bowl 2.
4)     Add in flour into butter/sugar mixture (i.e. Bowl 1 to Bowl 2) and mix it well with spatula until everything’s get well incorporated.
5)     Add in Walnut powder and chopped Walnuts into the above mixture and mix them well. Cover the cookie dough and leave it for at least 30 minutes.
6)     After 30 minutes, place cookie dough on baking sheet with help of small sized ice cream scoop leaving enough space in between cookies.
7)     Bake them for 25-30 minutes and it’s done.

Tips:
1) Don't over mix the batter.
2) Avoid Salt if you’re using Salted Butter.

Chocolate Strawberry Crumb Bars



Chocolate Strawberry Crumb Bars, This is a very very delicious, buttery, flaky Bars with sense of chocolate.

Ingredients:

1 cup of All Purpose Flour/ Maida
½ Cup Sweetened Condensed Milk
½ Cup Butter
¼ Cup Brown Sugar
¼ Cup Cherry
¼ tsp of Salt
¼ Cup Strawberry Jam



Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper and set aside.

2) In a bowl sieve the flour, salt and set aside.

3) In another bowl microwave sweetened condensed milk and half cup choco chips for 2 mins and set that aside for 5 mins, then mix well.

4) Take another bowl cream together butter and brown sugar then add flour and salt mixture. Combine that well until you have crumbly mixture.

5) Spread the 3/4th of the mixture and flattened that well over the baking tray and bake for 10-12 mins.. Then after spread chocolate mixture over baked crust and spread left over choco chips, put little by little jam over and crumbs of remaining mixture, Bake for 30-35 mins..until the center looks set.... let that sit for 1 hour ...Cut into square pieces.... Enjoy...



Tips:


1) Butter should be at room temperature.

2) Don't cut the bars in hot state.
