Devil Chocolate Cake



Devil Chocolate Cake with Chocolate Ganache, is a beautiful and moist cake,perfect for the occasion of Mother's Day. This is the best occasion to treat the family with this wonderful cake. The recipe is very basic and we can convert this into any kind of flavored cake as per the choice like Fruit or lime cake.


Ingredients:

Chocolate Ganache with Crunch:
½ Cup Cream
2 tbsp Chopped Chocolate Chips
½ Cup Chocolate
¼ tsp Salt
½ tsp Butter



Cake Batter:
1,2/3 cup of All Purpose Flour/ Maida
1,1/3 Cup Sugar
½ Cocoa Powder
2 Eggs
½ Cup Milk
½ Cup Hot Water
1 tsp Coffee Powder
2 tbsp Sugar
½ tsp of Baking Powder
1 tsp of Baking Soda
¼ tsp of Salt
½ Cup Butter
1 tsp of Vanilla Extract


                                                                                Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cake Pan.

1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour, cocoa powder, baking powder, baking soda, salt and set aside.

3) In another bowl cream together 
sugar and butter until become smooth and well combined, then add eggs, milk, vanilla and mix well.

4) Add coffee powder in hot water, let it cool for 5-10 mins.

5) Add dry ingredients(step 2) into wet ingredients(step 3) 
alternately with water(step 4) till every thing gets incorporated.

6) Bake for 50-55 mins.. After the cake is baked, let that cool completely and cut the cake in half 
horizontally.

7) For Chocolate Ganache heat up the cream just before it starts boiling, add chocolate into the cream and let that rest for 5 mins. After 5 mins mix that well till all the chocolate well combined with the cream then add butter and salt into that and mix well. Cool it completely then add chopped chocolate chips and mix well. 

8) Place one layer of the cake and spread ganache over that evenly and then place another layer of the cake, then top that with ganache, Serve it...and Enjoy!

3) Salted butter can be used, then in that case avoid salt.

Madeline Cookies


Madeline Cookies, these are my all time favrt cookies. These are small little cakes. they are my super soft and melting mouth. I wanted to make them since long but i was not able to find madeline pan. You can add any flavor like lime or orange. Here comes the recipe..hope you will enjoy trying and let me know the reviews..

Ingredients:

1 Cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Melted Butter
½ tsp Lemon Zest
2 Eggs
1 tsp of Vanilla
¼ tsp Baking Powder
¼ tsp of Salt
Powdered Sugar for sprinkle


Process:

**Tools Used: Hand MixerSpatulaWhiskBowl, Madeline pan.

1) Preheat your oven to 350F. Oil madeline pan well to avoid sticking.

2) In a bowl sieve the FlourBaking Powder, Salt and set aside.


3) In another bowl beat eggs well till they are fluffy. Then add in sugar, vanilla, lemon zest, melted butter and mix well. 


4) Add flour mixture into liquid batter slowly and mix well.


5) Devide the batter into madeline pan. Bake for 8-10 mins, let that cool for a while and sprinkle with powdered sugar and Enjoy with a cup of coffee.




Tips:


1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Custard Cake


Custard Cake, this cake is super soft and melting mouth. This is more like Britannia cake we have in india. You can add any flavor like lime or orange, also you can add some nuts or cherry in the cake to flavor cake. Here comes the recipe..hope you will enjoy trying and let me know the reviews..


Ingredients:

1 ¼ Cup of All Purpose Flour/ Maida
1 Cup Sugar
1 tbsp Custard Powder
½ Cup Oil
¼ Cup Curd
3 Eggs
1 tbsp of Vanilla
1 tsp Baking Powder
¼ tsp of Salt


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf tin with parchment paper and keep it aside.

2) In a bowl sieve the FlourBaking Powder, Salt, Custard Powder and set aside.

3) In another bowl mix together the Oil, Eggs, Vanilla, Curd and Sugar until everything well combined and beat till the mixture gets lite and fluffy.

4) Add flour mixture into liquid batter slowly.

5) Pour the batter into cake tin. Bake for 50-60 mins, let that cool for 10-15 mins and Enjoy with ta cup of coffee.


Tips:

1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Eggless Chocolate Cake with Chocolate Ganache




Eggless Chocolate Cake with Chocolate Ganache, was a surprise for my friend's birthday. He is very very special for me and this was the best occasion to treat him with this wonderful cake. This Cake is a basic eggless chocolate cake recipe. We can convert this into any kind of flavored cake as per the choice like Fruit or lime cake.


Ingredients:

Chocolate Ganache:
½ Cup Cream
½ Cup Chocolate
¼ tsp Salt
½ tsp Butter


Cake Batter:
1 cup of All Purpose Flour/ Maida
¼ Cocoa Powder
½ Cup Milk
½ Cup Sweetened Condensed Milk
2 tbsp Sugar
1 tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
½ Cup Butter
1 tsp of Vanilla Extract


                                                                                Process:


**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

4) Add dry ingredients into wet ingredients till every thing gets incorporated.

5) Bake for 30-35 mins.After cake baked, let that cool for 10-15 mins.

6) For Chocolate Ganache heat up the cream just before it starts boiling, add chocolate into the cream and let that rest for 5 mins. After 5 mins mix that well till all the chocolate well combined with the cream then add butter and salt into that and mix well. Now we are ready to glaze that on the top of our cake...and Enjoy!

Crusty Orange Cake



Crusty Orange Cake, this is such a basic and wonderful recipe with the freshness of orange and crunchy crust. This is very playful recipe ...can be mold to any of your ideas. This is just my version of making orange cake...this is perfect just to celebrate any special occasion..Hope you all would try this and enjoy as we did...


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½  Cup Sugar
½ Cup Butter
2 Eggs
1 tsp of Vanilla
1 tsp Baking Powder
1/3 Cup Sour Cream
¼ tsp Orange Zest
1/3 Cup Orange Juice
¼ tsp of Salt

Crust:
2 tsp Vanilla Sugar
¼ tsp Orange Zest

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Grease a round pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and sugar until the mixture gets fluffy ,then add eggs one at a time and beat till the mixture gets lite and fluffy. Add vanilla extract and Sour Cream, mix well.

4) Add flour mixture into wet batter slowly.

5) Pour batter in cake tin. Mix together vanilla sugar and orange zest. Sprinkle this over the top of the cake batter. Bake for 25-30 mins.

6) After cake baked, let that cool for at least an hour.

Tips:

1) Don't over mix the batter.

2) Avoid Salt if using Salted Butter.

3) Sour Cream can be replaced with Curd.

4) All the ingredients should be at room temperature.

Yogurt Pound Cake




Yogurt Pound Cake, This cake is one the most flavor full cake i have made till date. This is extremely soft cake with the flavor of fresh vanilla from vanilla yogurt. Enjoy the slice of this wonderful cake with cranberry sauce. So i hope you will try this and let me know the comments.


Ingredients:

2 ¼ cup of All Purpose Flour/ Maida
1½ Cup Sugar
3/4 Cup Oil
3 Eggs
1 tsp of Vanilla Extract
1 tbsp Baking Powder
3/4 Cup Vanilla Yogurt
¼ tsp of Salt


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf pan with parchment paper and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl mix together the Oil, Vanilla Yogurt and Sugar until the mix well, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract and mix well.

4) Add flour mixture into batter slowly and fold in with spatula.

5) Pour the batter into loaf pan and Bake for 50-55 mins, let that cool for 10-15 mins and Enjoy!

Fruit Cake



Fruit Cake, This cake is full of nuts and dry fruits. This is super soft cake with the crunch of nuts. I have prepared this cake for Christmas and thats the perfect thing to make for the occasion. Try this and let me know if you liked.


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Butter
3 Eggs
1 tsp of Vanilla
1 tsp Baking Powder
4 tbsp Curd
¼ tsp of Salt
½ Cup Mixed Dry Fruits
Chopped(Walnuts, Fig, Apricots, Almonds, Dry Cranberries)
¼ Cup Sliced Almonds

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf pan with parchment paper and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and Sugar until the mixture gets fluffy, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract and mix well.

4) Add flour mixture into butter batter slowly alternate with curd.

5) Fold nuts into the batter until well combined.

6) Pour the batter into loaf pan with sliced almonds topped over the cake. 

7) Bake for 50-55 mins, let that cool for 10-15 mins and Enjoy!

1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

Pumpkin Bars



Pumpkin Bars, are very soft and flavorful bars that gives such a warmth in these winters. These bars are topped with homemade cream cheese frosting posted on my blog. These are quite simple and healthy bars with pumpkin spices. What else i can say about these bars other than to suggest you guys to try for once.

Ingredients:

1 cup of All Purpose Flour/ Maida
1 Cup Sugar
½ Cup Vegetable Oil
1 tsp of Vanilla
1 Cup Pumpkin Puree
1 tsp Baking Powder
½ tsp Baking Soda
¼ tsp of Salt
1 tsp Pumpkin Spice/ Cinnamon Powder
Cream Cheese Frosting

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Line square cake tin with liners and set aside.

2) In a bowl sieve the flour, Baking Powder, Baking Soda, Pumpkin Spices, Salt, then mix well and set aside.

3) In another bowl mix in Vegetable Oil, Sugar, Eggs, Pumpkin Puree, Vanilla with hand mixer until the mixture becomes lite and fluffy.

4) Add flour mixture into wet batter slowly using spatula.

5) Transfer the batter in baking tin and bake for 35-40 minutes...let them cool for an hour atleast...Cut into square bars and top with cream cheese frosting..Enjoy!

Fruitcake Cookies



Fruitcake Cookies, These cookies are full of nuts and fruit cake flavor but in the form of cookies. these are soft yet crunchy cookies. I have prepared these cookies with grape juice but as traditional fruitcake, you can make these with rum or sherry. These are very simple and quick cookies. Try this and let me know if you liked.

                   Ingredients:
1/2 Cup dried figs
1/4
 Cup raisins
1 tbs honey
2 tbs Grape Juice
1 tbs freshly squeezed lemon juice
1/2 Cup chopped Walnuts 
Kosher salt
2 sticks/1 Cup unsalted butter, at room temperature
1/2 tsp ground cloves
1/2 cup superfine sugar
1/3 cup light brown sugar, firmly packed
1 egg
2 2/3 cups all-purpose flour

Process:
**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1)  Preheat the oven to 350F. Grease the cookie pan with butter and cover the bottom with butter paper.

2) Take a big bowl, add in nuts, dry fruits and grape juice. mix well and store for few hours or over night.
3)  Cream together butter, refined sugar, brown sugar, grounded clove till mixture turns lite and fluffy. Add in egg and beat well incorporated.

4)  Add in all purpose flour and salt. Mix well until incorporated. Don't over mix the dough.  At last fold in dry fruit and nut mixture in the dough. Roll the dough in parchment paper and let it rest for an hour at least in refrigerator. 
5)   Cut and spread cookies into 2 to 3 inch circles about 1/2-inch thick. Bake them for 20-25 minutes until light golden. Let them cool.

Tips:
1) Don't over mix the batter.

2) This Cookie dough can be stored in deep fridger for later use. I have rolled the dough in parchment paper and stored the same.

3) Use nuts of your choice.

Khaja (Sweet Dish)-- Happy Diwali



Khaja, is a delicious and crispy sweet dish. I learnt this recipe from my friend Sridevi. I would like to dedicate this recipe to her and wanna thanks her for teaching me the same. This desert has amazing texture i.e crispy layering with full of sweetness from sugar syrup. So this is the perfect recipe to complete Diwali.
I wish all my friends a Happy Diwali...May this festival of lights bring more prosperity and happiness in everyone's lives.

Ingredients:

1 Cup All Purpose Flour/Maida
2 tbsp  warm Ghee/Butter
¼ tsp Salt
½ Cup Water
Pinch of Baking Soda
Pinch of Baking Powder
½ tsp Cardamom Powder
Oil to Deep Fry

 1 Cup Water
2 Cup Sugar

Process:

1) Take a big bowl, add in flour, salt, baking powder, baking soda and oil. Rub well with your fingers. Kneed a smooth dough with the help of water. Cover and let the dough rest for half an hour.

2) For the Syrup heat up the water and sugar on medium flame to make syrup. Boil the syrup and let it reduce to half. Switch off the flame and let it rest covered to use it a bit warm.

3) Preheat oil till hot to fry. Divide the dough in three equal parts and roll the dough in a big and thin chapati. Apply ghee on one side of all chapati's then sprinkle dry flour over applied ghee. Now stack one chapati over another. 

4) Now roll the chapati stack from one end to another like we did for making pinwheels. Now cut an inch thick through out the roll. The roll will look like a big rope and we have to cut that an inch thick. 

5) Now take each part and roll once over each part a bit with help of rolling pin. Now fry them on medium low flame till they turn golden brown in color.

6) Once they are fried, Dip them in sugar syrup and coat them properly. Now they are ready...

Halwa (My Style)



Halwa, i know i took allot of time to share our famous punjabi Halwa. This is the one recipe everybody in north India loves to have any day anytime. Today i would like to share this specially to all my friends who are there to support my work. And this recipe is my gesture to express my love to all my friends there. Here I want to mention that i mix three kinds of flour to have the best of them in one dish. Texture of semolina and aroma of gram flour creates wonder in this dish.


Ingredients:

¼ Cup Semolina (Rawa)
¼ Cup Wheat Flour
¼ Cup Gram Flour(Besan)
3/4 Cup Clarified Butter(Ghee)
3/4 Cup Sugar
½ tsp Cardamom Powder
½ Cup Chopped Almonds,Rasins
3 Cups Water
Grated Coconut for Garnish


Process:

1) Take a sauce pan and heat up water and sugar, let it comes to boil.

2) Meanwhile heat up clarified butter in a skittle. One that's hot add in Semolina, Wheat flour, Gram flour. Stir continuously on low flame till the color of flour mixture turns brown.

3) Now add in water and sugar boiling mixture into flour mixture slowly. Stir rigorously to protect lumps to be formed and the consistency you like. Then add in nuts and cardamom powder at last and mix well.

4) Garnish with nuts and coconut...Enjoy!

Lime Cranberry Muffins (Egg less)




Lime Cranberry Muffins, are one of the most delicious muffins one would have and that too egg less. Today we celebrated Ashtami by doing 'Kanya Pujan' at my house. So i wanted to bake for kids but without eggs. I hope this one will be fun for those who doesn't eat eggs. Certainly i love to bake with fresh fruits with the deep flavor of cranberries. What else i can say about these muffins other than to suggest you guys to try for once.

Ingredients:

1½  cup of All Purpose Flour/ Maida
1 Cup Sugar
½ Cup Butter
1 tsp of Vanilla
1 tsp Baking Powder
½ tsp Baking Soda
1 tsp Lime Zest
2 tbsp Curd/ Sour Cream
¼ tsp of Salt
½ Cup Fresh Lime Juice
½ Cup Cranberries


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Muffin Pan.

1) Preheat your oven to 350F. Line muffin tin with liners and set aside.

2) In a bowl sieve the flour, Baking Powder, Baking Soda, Salt, then mix well and set aside.

3) In another bowl mix in melted Butter, Sugar, Lime Juice, Vanilla, Sour Cream, Lime zest.

4) Add flour mixture into wet batter slowly using spatula.

5) Fold in cranberries with batter.

6) Distribute the batter equally in muffin tin and bake for 25 mins..let them cool for 15 minutes...Enjoy!
