Chickpea's Salad



Chickpeas Salad, This is a healthy and quick salad..i love to enjoy this after coming from office as a snack..you can enjoy this along with food. Also best way to serve your children requirement for raw salad.You can change vegetable with your own taste like grated cucumber etc.

Here Comes the Recipe

Ingredients:
Serving 2 Person
2 Cup Boiled Chickpeas
½ Cup Cucumber chopped
                                                             ½ Cup onion chopped
                                                              ½ Cup Tomato chopped
½ tsp Cumin Powder
½ tsp Chaat Masala
½ tsp Sugar
1/2 tbsp lime juice
½ tsp Green chili chopped Optional
Chopped Cilantro
Salt and Pepper as Taste


Process:


1) In a bowl, mix together boiled chickpeas, cucumber, onions, tomato, lime juice, salt, pepper, cumin powder, sugar, chaat masala, green chili chopped, cilantro.

2) Serve cold and Enjoy!!

Pan Roast Chicken


Pan Roast Chicken, is a quick cheating for oven roast or tandoori chicken. I am sure you will not miss the crust you get in oven or tandoor. I would love to here from you guys that how much you liked this one.

Ingredients:

Thinly Sliced Chicken Breast
1 tsp Ginger Garlic Paste
1 tsp Tandoori Masala
1 tsp Red Chili powder
 1 tbsp Oil
1 tsp Salt
½  tsp Chat Masala
½  tsp Lime Juice


Process:


1) Take a large Bowl, Tandoori masala, Ginger Garlic Paste, Red Chili, 1/2 tbsp Oil, Salt, Lime Juice and mix well. Apply that well over chicken breast. Let it rest for atleast an hour.

2) Preheat your 1/2 tbsp oil in a flat pan. Let the pan be really really hot and then put the chicken over the pan and cover the lid. Let the flame be on max. Cook for 2-3 minutes on both sides with lid on.

3) Sprinkle chat masala over and serve with Mint Chutney and Salad.

Banarasi Chura Matar (Poha)



Banarasi Chura Matar, was one of the best things i ate in banaras..and loved it. I wanted to recreate the magic at home..so i got the recipe and i modified a bit for my taste... Its best to make in winters when we get fresh and sweet peas. Its such a flavorful recipe with the flavors of whole garam masala...Try these, i am sure you will be addicted by this morning/evening snack.

Ingredients:

1 Cup of Poha
1 Cup Fresh Peas
1 tbsp Lime Juice/ Amchur
1 Stick Cinnamon Stick
2-3 Whole Black Pepper
1 Grounded Cardamom
1 tsp Garam Masala
1 tsp Cumin Seeds
1 tbsp Grated Ginger
1 tbsp Sugar
½ tsp Red Chili Powder
½ tsp Minced Green Chili
½ Cup Water
1 tbsp Chopped Cilantro
1 tsp of Salt
2 tbsp Ghee/Clarified Butter

Process:

1) Soak poha in water for atleast 2 hours. Then remove excess water from poha . Add in Salt, Red Chili Powder, Garam Masala, Amchur, mix well and set it aside.

2) Preheat Clarified butter. Add in Cumin seeds, Cinnamon, Black Pepper, Cardamom, Grated Ginger Stir a bit. Add in minced Green chili, Peas, Sugar, Water and let it cook for 5 minutes with lid. 

3) Now add in Poha and mix well. Cover and cook for few minutes. Poha is now ready to serve with the garnish of Cilantro...

4) Serve with mint chutney.

Aalu Tikki Chaat




Aalu Tikki Chaat, I know many of you would love to have this just now...Have this chaat at any time of the day as there cannot be a fix time to have this yummy snack. 

Ingredients:

1 Tikki Premade
Pinch Salt
Pinch Cumin Powder
Pinch Red Chili Powder
1 tsp Ginger Julian
¼ Cup Curd
2 tbsp Tamarind Chutney


Process:

1) Take a serving plate. Place a tikki and cut into half. Pour curd then tamarind chutney over the tikki.

2) Now sprinkle salt, red chili powder and cumin powder. Sprinkle ginger Julian for garnish.

Aalu Tikki (Potato Peas Cutlet)




Aalu Tikki, These cutlets we are eating since childhood from Indian street chaat food. This one used to be one of the biggest treat for evening snack. These cutlets are full of flavor with the crusty top with soft potatoes and the core is burst of flavors..I hope you all will love this and enjoy as a tea time snack.

Ingredients:

2 Cup Boiled Mashed Potatoes
1 tbsp Cornflour
1 tsp Lime Juice
1 tsp Cumin Powder
½ tsp Red Chili Powder
1 tsp Ginger Garlic Paste
1 tsp Dry Mango Powder
1 tsp Coriander Powder
1 tsp Cumin Seeds
1 Cup Peas
1 tsp of Salt
¼ Cup Roasted Crushed Peanuts
¼ Cup Chopped Cilantro
¼ Cup Chopped Cashews
Oil to Shallow Fry


Process:

1) Take mashed potatoes in a big bowl and add in cornflour, salt, cilantro, lime juice and mix well.

2) Take a tsp of oil in a fry pan and once the oil is hot add in cumin seeds, ginger garlic paste, Then add in salt, red chili powder, dry mango powder, coriander powder and peas. 

3) Cook on medium low flame and mash a bit with spatula. Add in chopped almonds and mix well.  Let the mixture cool down.

4) Now to make tikki's, take a big lemon size ball of potato and make a hole in the middle to fill with peas mixture and close the potato mixture. Now we have balls of potatoes with the peas mixture in the core. Press them to flatten them.

5) Take a flat nonstick skittle. Heat the oil in a pan, once oil is hot add in tikki's and fry from both sides till they turn golden brown from both sides. Now tikki's are ready, Serve with mint chutney.

Masala Puri's



Masala Puri's, is my other favorite way to eat left over puri's. This is full of flavor and masala. I love to share this recipe with all of you, as this is really a burst of flavors. SO i request them to try this and don't miss it any further.


Ingredients:

8 Peice Puri's 
4 tbsp Mashed Potates
2 tbsp Sev
1 tbsp Lime Juice
Cilantro for Granish
2 tbsp Finely Chopped Onions
Salt,Chat Masala and Red Chili to Sprinkle


Process:

1) Make holes in puri's to fill them. Now put some mashed potatoes inside the puri's.

2) Now fill the puri's with onion. Tamrind chutney or Curd can be filled if preferred.

3) Now sprinkle salt, chat masala and red chili powder as per taste.

4) At last garnish with sev and cilantro...Squeeze lime juice and Enjoy....

Puri For Pani Puri



Puri For Pani Puri, is one of the most in demand snack of all time on India. I have seen people crazy to have this any time you say. I am staying in USA right now and here i am not finding my "gol guppe wala bhaiya". I just wanted to make this at home to make this more reachable. I know many people are there who are missing this one. SO i request them to try this and don't miss it any further.


Ingredients:

1 Cup Wheat Flour
2 tbsp Oil
1 tsp Salt
¼ Cup Water
Pinch of Baking Soda
Oil to Deep Fry


Process:

1) Take a big bowl, add in flour, salt and oil. Rub well with your fingers. Kneed a tight dough with  the help of water. Let the dough rest for 10 minutes.

2) Preheat oil till hot to fry. Divide the dough in two part and roll the dough in a bog chapati . Cut with cookie cutter to make small round shape. Fry these round shaped dough on medium high flame. 

3) While frying press puri's a bit with spatula to fluff them. Now preheat oven at 200 degrees. Transfer the puri's in a flat baking pan.

4) Bake puri's for about 20 minutes. Now the crunchy puri's are ready to to eat one cool down. Serve with boiled mashed potatoes inside the puri's and fill them with pani (Refer Pani for Pani Puri).

Pani for Pani Puri




Pani for Pani Puri, hmmm i don't have words to explain how wonderful this is. I don't know anybody who doesn't like pani puri. This recipe is the one go to recipe that's quite easy and quick to make if you have both tamarind chutney and coriander chutney in hand. I just hope you will try this recipe and let me know how much you really liked this.

Here comes the Recipe


Ingredients:

Serving 2 Person
2 Cup Water
2 tbsp Coriander Chutney
1 tbsp Tamarind Chutney
¼ tsp Black Salt
¼ tsp Red Chili Powder
¼ tsp Cumin Powder
¼ tsp Chaat Masala 
¼ Cup Boondi


Process:

1) Mix in Coriander Chutney, Tamarind Chutney, Black Salt, Red Chili Powder, Cumin Powder, Chaat Masala, Boondi in water.

2) Serve Chill...Enjoy!

Egg Bhurji (Scrambled Eggs)



Egg Bhurji, The Easiest Wholesome Appetizing Indian side dish. This works really well when we want to make something really quick with less effort but, off course tasty. When i used to work, that time i wanted to make some quick dish that i could take for lunch..then, this one really helped me allot. I tried it with Tortillas and believe me, the novel idea stimulated the whole newer set of taste buds all together. It went brilliant with my homemade Tortillas & a glass of Cranberry juice on that nippy day in Grand rapids!! 

                     Ingredients:
                       Serving: 2 Persons
4 Eggs Beaten
1 Medium Onion Sliced
1 Medium Tomato Sliced
1 Green Bell Pepper Sliced
1 tsp Chat Masala
1 tsp Minced Green Chili
1 tbsp Oil
Cilantro for Garnish
Salt and Pepper as Taste

Process:
1)     Heat the Oil in large skillet on medium high heat.
2)     Once Oil is hot, add in Cumin seeds, Green Chilies and Ginger Garlic paste.
3)     Once Ginger Garlic turns brown add Onions, Tomatoes & Green bell pepper and stir continuously till they turn glossy. Add in Coriander Powder, Chat Masala and Salt & Pepper. Stir it well.
4)     Then, add in scrambled beaten Eggs and mix well. Stir continuously.
5)     Cook for 5 minutes on low heat with lid on.
6)     Garnish with Cilantro and Serve hot.

Bhaji From Pav Bhaji



Bhaji From Pav Bhaji, tell me who doesn't like Pav Bhaji. I have already shared my recipe for Pav in previous post. I am sharing a quick though flavor full Bhaji. As everybody knows bhaji is quite buttery, i have tried to make this with least butter with the flavors preserved. So give this a try and let me know if you liked this.

          Ingredients:
           Serving: 4 Persons
1 Cup Cauliflower Chopped
1 Cup Eggplant Chopped
2 Medium Potatoes Chopped

Medium Onion Chopped

Medium Tomatoes Chopped

1 Cup Chopped Carrot
1 tsp Ginger Garlic Paste
1 tsp Cumin Seeds
½ Cup Peas

2 tbsp Pav Bhaji Masala
1 tsp Coriander Powder
1 tsp Chat Masala
1 tsp Minced Green Chili
1 tbsp Oil

1 tbsp Butter
Cilantro for Garnish
Salt and Pepper as Taste

Process:
1)    Pressure cook carrots, potatoes, cauliflower, peas, eggplant or any other vegetable of your choice with half a cup of water for 5 minutes till vegetables softens.

2)     Heat the Oil in large skillet on medium high heat, add in cumin seeds till aroma comes. Then add in ginger garlic paste, onions and stir till onions turns light brown.
3)     Add in green chili and tomatoes. Cook them till oil separates then add in salt, pav bhaji masala, red chili powder, coriander powder and stir well.
4)     Add in cooked vegetables with water in it, continuously stir and mash with potato masher for 10 minutes on simmer.
5)     Bhaji is ready, Serve with how much butter to love to have on your bhaji with the sprinkle of cilantro.

Sub Sandwich




Sub Sandwich, Recently i have become a great subway fan and just crave for this like almost daily. And there's no way i can go to subway anytime i want to have this sub, So i just wanted to make something like at home i.e. close to my favorite sub. I can see many people out there would love to try this Sub, who are great subway fan like me. There's no fixed recipe as such, you can just play with the ingredients to make it the way you like. I am making veggie Sub Sandwich today..

Here comes my Recipe:

Portion: 1 Sub Sandwich

Ingredients:

1 Sub Sandwich Bun 
3-4 Pickled Jalapeno
2-3 Pickled Cucumber
1 Cheese Slice
3 Slices Tomato
3 Slices Onion
1 Burger Bun
3 Slices Cucumber
1 tsp Lite Mayonnaise
1 tbsp Mustard Sauce
Cooking Spray Oil
lettuce

Process:

1) Take Sub Sandwich Bun and Cut in half.

2) Place cheese slice over the one side of bun and spray some cooking oil over the bun.

3) Place the bun in oven on broiler for 5 minutes till cheese melts and bun turns crispy.

4) Layer the bun with tomatoes, onion, cucumber, Pickled Jalapeno, Pickled Cucumber and lettuce.

5)  Garnish with Mayonnaise and Mustard Sauce ...Enjoy!

Fillet-O-Fish My Style



Fillet-O-Fish, I just hope every fish lover would love to try this recipe. I can tell you he just loves to eat this more and more. This is a great combination of crispy fish with the flavor of fresh veggies. I love to use whole grain bun to give a healthy twist. I can only say here to try this and enjoy with your family and let me know how they liked this "Fillet-O-Fish".

Here comes the Recipe

Portion: 1 Fillet-O-Fish

Ingredients:

1 Tilapia Fillet/ Salmon Fillet
½ Cup Panko Bread Crumbs
½ Cup All Purpose Flour/ Maida    
1 Eggs Beaten
2 tbsp Oil
2 Slices Tomato
2 Slices Onion
1 Burger Bun
2 Slices Cucumber
1 tsp Cream Cheese
1 tsp Tomato Ketchup
lettuce
Salt and Pepper to taste

Process:


1) Preheat the oil in a large non stick pan on medium heat.

2) Rinse Tilapia Fillets under cool running water. Pat dry with paper towel.

3) Marinate Tilapia fillets with Salt, Pepper on both side.

4) Season beaten Egg, Flour and Bread Crumbs with Salt and Pepper

5) Coat Marinated Tilapia fillet with seasoned flour, shake off the access flour and dip in seasoned Egg well coated on both side of Tilapia. Coat the Tilapia fillet with seasoned bread crumbs well. Dip Tilapia again in Eggs and again coat with bread crumbs for the perfect crispy crust.

6) Place the bread coated Tilapia in the hot oil and cook for 3-4 minutes on each side.

7) Spread cream cheese over on side of the burger bun and ketchup on the other side. Place cooked Tilapia over the bun.

8)  Garnish with sliced tomato, onion, lettuce ...Enjoy!



Tips:

1) Fish turns tough very soon if cooked.

2) Seasoning can be chosen as per desired like Italian herbs cab be used.

Soya Patties





Soya Patties, Quite an Easy dish to make, Appetizing, Butterish snack for your Chai (Tea) time 
        
     
Ingredients: Portion 6 Patties

1 Puff Pastry Sheet
1 Cup Socked Crumbled Soya
1 tsp Chopped Green Chili
Salt and Pepper as taste
½ Cup Boiled Peas 
1 tsp Milk
1 Egg 

Process:
1.     Preheat the oven to 425F. Line the baking sheet with Aluminum foil.
2.     In a bowl mix together Soya, Green chili, Peas, Salt and Pepper.
3.     In another bowl beat egg with milk.
4.     Roll the puff pastry sheet with help of all-purpose flour. Cut the sheet into six equal triangles. 
5.     Coat the edges with egg mixture and place soya filling at the center of pastry sheet triangles. Fold and seal the edges in any shape you like.
6.     Bake them for 15-20 minutes until golden in color and it’s done.
Enjoy!


Tips:
1.     You can use any filling inside the patties like cooked chicken or crumbled meat etc.
2.     Move puff pastry sheet from the frozen section of the refrigerator to cooling section at least an hour before baking time.

Cheese Croissant




Cheese Croissant, is a simple and tasty snack with flavor of cheese, serve them warm and goes well with tea. 

Ingredients: Portion 6


 1 Puff Pastry Sheet

 ½ Cup Grated Mozzarella
 1 Egg


Process:


**Tools Used: Bowl, Cookie Pan.

1)    Preheat the oven to 425F. Line the flat baking pan with butter paper.


2)    Roll out the puff pastry sheet with the help of all purpose flour. 


3)  Cut puff pastry sheet in six triangles with the help of pizza cutter.

4)  Spread mozzarella all over the triangle and roll them in the shape of Croissant. 

5)   Place them on baking pan with enough space in between each other. 

6) Brush Croissants with beaten egg.Bake for 15-30 minutes until golden in color.

Enjoy!



Tips:


1)  Move puff pastry sheet from frozen section of refrigerator section at least 2 hours prior from the making time.

2)   Use any kind of thin sausage slices or ham slices with cheese for the variation.

Sweet Potato Chaat



Sweet Potato Chaat, Here's the Indian snack. This is sweet and sour snack for tea time.


Ingredients:

2 Big Sweet Potatoes
¼ Cup Chopped Onion
¼ Cup Chopped Tomato
¼ tsp Black Salt
½ Cup Sev
¼ tsp Red Chili Powder
1 tbsp Cilantro Mint Chutney
1 tbsp Tamarind Chutney
4-5 Papdi's
Cilantro for Garnish


Process:

1) Boil Sweet Potatoes on medium low flame covered for about 10 minutes. Test with fork inserted in Sweet Potatoes if they are cooked.

2) Once Sweet Potatoes are cooked, Remove from water and let them rest for 10 minutes. Remove the skin from Sweet Potatoes and chop in bite size pieces.

3) Take a big bowl, Add in chopped Sweet Potatoes, Chopped Onion, Chopped Tomato, Cilantro Mint Chutney, Tamarind Chutney, Red Chili Powder, Black Salt and Mix everything well.

4) Serve with papdi whole or crushed. Garnish with Sev and Cilantro...Enjoy!
