Chickpeas Bruschetta




Here I present to you the perfect Antipasto - “Chickpeas Bruschetta”.  By now all of you must have got the idea that how much my family like bruschetta's. This simple tasty dish has nothing much to explain about, but, has all the qualities to prefix any meal or a perfect standalone snack for your Chai (Tea) Time. The Crunchy bread – The Soft Chickpeas - The Homemade Coriander Chut – A Sip of Tea – And I Say Wow!!

Here comes the Recipe

Ingredients:

 Serve 2 Person
 4 Slices of baguette
1 tbsp Coriander Chutney
 1 Cup Boiled/ Canned Chickpeas
 1 tsp Olive Oil
 ½ Cup Homemade Salsa


Process:

1)    Heat up a flat nonstick pan on medium high heat. Brush the pan well with Olive Oil.

2)    Once the pan is hot, roast both sides of baguette slices till they turn brown.

3)    Take a bowl and mix chickpeas with Salsa and Coriander Chutney, keep it in refrigerator for half an hour .

4)    Put cold Chickpeas mixture over the top of toasted hot baguette.

Orange Cake



Orange Cake, this cake will fill up your house with the warmth of lime fragrance and will make your taste buds alive with the delicate orange flavor. I prefer to use Orange zest because it makes alot of difference in the flavor. Here comes the recipe..hope you will enjoy trying and let me know the reviews..


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
¼ Cup Orange Juice
1 tsp Orange Zest
½ Cup Sugar
½ Cup Butter
2 Eggs
1 tbsp of Vanilla
1 tsp Baking Powder
3 tbsp Curd
¼ tsp of Salt


Process:

1) Preheat your oven to 350F. Line square cake tin with parchment paper and keep it aside.

2) In a bowl sieve the flourBaking Powder, Salt and set aside.

3) In another bowl cream together the Butter and Sugar until the mixture gets fluffy, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract, lime zest, curd and mix well.

4) Add flour mixture into butter batter slowly alternate with lime juice.

5) Pour the batter into cake tin. Bake for 45-50 mins, let that cool for 10-15 mins and Enjoy with the sprinkle of powdered sugar!


Tips:

1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) Salted butter can be used, In that case avoid salt.

3) All the ingredients should be at room temperature.

Soya Matar


Soya Matar, is a extremely healthy side dish. The dish is a dry dish goes great with indian bread known as chapati and we prefer to have some kinda a lentil. That's a perfect dinner menu. I used to prefer the dish with Indian bread (Chapati) but recently, I tried it with Tortillas and believe me, the novel idea stimulated the whole newer set of taste buds all together. It went brilliant with my homemade Tortillas/Chapati & a bowl of lentil. 
               Ingredients:
             Serving: 2 Persons
1 Cup Socked Crumbled Soya Chunks
1 Medium Onion Chopped
1 Medium Tomato Chopped
1 tsp Ginger Garlic Paste
½ Cup Peas
1 tsp Chat Masala
1 tsp Minced Green Chili
1 tbsp Oil
Cilantro for Garnish
Salt and Pepper as Taste

Process:
1)     Heat the Oil in large skillet on medium high heat.
2)     Once Oil is hot, add in Cumin seeds, Green Chilies and Ginger Garlic paste.
3)     Once Ginger Garlic turns brown add Onions & Peas and stir continuously till they turn glossy. Add in Coriander Powder, Chat Masala and Salt & Pepper. Stir it well.
4)     Then, add in soya (socked and without water) and mix well. Stir continuously.
5)     Cook for 5 minutes on low heat with lid on.
6)     Garnish with Cilantro and Serve hot.

Curry Masala (Tip)



Curry Masalathis tip is for all my friends who eventually gets very less time for cooking from scratch for lunch and dinner all days..also the days when unexpected guests come over. Just make this big batch once and divide into batches and deep froze those batches. Once you need to make a curry, then take a batch from refrigerator and leave them on kitchen counter top for an hour or microwave for a minute and its ready to use. That's how you can save a big step to make instant curry any time you like.

Ingredients:

1 tbsp Minced Ginger
1 tbsp Minced Garlic
4 Large Onion Grated
61 Large Tomato Pureed
2 tsp Red Chili Powder
2 tsp Salt
1 tbsp Cumin Seeds
1 tbsp Turmeric Powder
5 tbsp Oil / Clarified Butter


Process:

1)  Take a big pan, heat the oil on medium flame and once oil is hot add in cumin seeds and let that turns brown, then add in Ginger Garlic paste and stir for a minute till cook. 

2) Add in and Onions and Salt, cook till brown. Add in tomato puree and cook until oil separates.

3) Add in Coriander powder, Turmeric Powder, Red chili powder and stir.

4) Now the gravy is ready to use...Enjoy!

Aalu Matar Paneer


Aalu Matar Paneerthis recipe goes great with puri..i mean the best. I prefer to twist this recipe with pav bhaji masala, that actually turns this dish into exotic one. I prefer to serve this dish with puri's. I will share that soon, else this can be enjoyed with Rice, Roti, Parantha or Tortilla.

Ingredients:

1 Cup Paneer Cubes
½ Cup Peas
2 Chopped Medium Potatoes
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 Large Onion Grated
1 Large Tomato Pureed
1 tsp Red Chili Powder
1 tsp Salt
1 tsp Cumin Seeds
1 tsp Turmeric Powder
2 tbsp Oil / Clarified Butter
1 tbsp Pav Bhaji Masala
Cilantro Leaves for garnish


Process:

1)  In a pressure cooker, heat the oil on medium flame and once hot add in paneer cubes and shallow fry till turns brown and remove from the pan.

2) Add cumin seeds in oil and let them turns brown, then add in Ginger, Garlic and Onions. Salt the Onion just a bit and cook till brown. Add in tomato puree and cook until oil separates.

3) Add in Coriander powder, Turmeric Powder, Red chili powder, Pav Bhaji masala and stir.

4) Add in Peas, paneer cubes, potatoes and cover pressure cooker lid and cook for one wissel and let it cook for 10 minutes at medium low flame.

5) Once done, garnish with Cilantro...Enjoy with Rice, Chapatis, Parathas or Naan.

Rasgulla



Rasgulla, is a sweet dish that is favorite of most of Indians. This a soft and juicy sweet made from dried cottage cheese. Cottage cheese can be prepared with milk and lemon juice/vinegar. I hope my all friends would love to try this rasgulla recipe and enjoy with there family.

Here comes the Recipe

Ingredients:

1 Cup Cottage Cheese
1 tbsp All Purpose Flour/Maida
  1 Cup Water
2 Cup Sugar
½ tsp Cardamom Powder


Process:

1) Take cottage cheese in a bowl and mince well with all purpose flour with the help of hands till the mixture turn smooth and non crumbly. Now make equal sized lemon sized balls. These balls should be smooth enough to avoid them to break.

2) For the Syrup heat up the water and sugar on medium flame to make syrup. Boil the syrup and let it cook for 2 minutes on low flame.

3) Now put the cheese balls in boiling syrup on high flame and cover for 15-20 minutes and stir in between. Then after you may observe the syrup is turning thick, to avoid that add 1 tbsp room temperature water in between into boiling syrup to have consistent syrup nature.

4) Let them cook for another 10 minutes like this and add in cardamom powder. Then after let them sit for 4-5 hours till syrup is absorbed well inside the rasgulla's.

Enjoy them chilled!

Bread Roll



Bread Roll, is my favorite tea time snack. Every Sunday morning we myself and my brother used to wait for these bread rolls and used to eat them with the competition, that who gets more to eat. Ohhh those were the fun days...They are crunchy with the sift flavorful core. I hope you try them and let me know how you really liked them.


Ingredients:

2 Cup Boiled Mashed Potatoes
4 Bread Slices
1 tsp Red Chili Powder
1 tsp Coriander Powder
2 tbsp Rice Flour/ All Purpose Flour
1 tsp chopped Green Chili
1 Cup Rice Flour/ Maida
1 tsp Chaat Masala 
Oil for Deep Frying
1 tbsp Chopped Cilantro
Salt to taste


Process:

1)  In a Big Bowl add in mashed potatoes, green chili, salt, red chili powder, chaat masala, coriander powder, cilantro and mix well till combined.

2) Heat the Oil in large skillet on medium high heat to fry Bread Rolls. 

3) Take some water in a bowl, dip the bread slightly in water and squeeze water. The purpose is only to moist the bread to roll bread. 

4) Divide potato mixture in medium sized balls and put potato mixture in the middle of bread and try to cover the mixture with the bread completely in round way..as shown in the above picture.

5) Coat the rolls with rice flour or all purpose flour to prevent alot of oil gets sucked by the bread. Fry them on medium heat till that turns golden brown in color.

Chili Chicken


Chili Chicken, Whooo..is such a simple and yummy chicken recipe to have a great variation in chicken. Recently i have learnt this recipe and tried...its supper yummy one. Here's the quick chicken side dish/Snacks. Can be enjoyed with Tortilla, Indian Chapati.

Here comes the Recipe for 


Ingredients:

Serving: 2 Person

1 lb Boneless Chicken
2 Medium Onion
1 Small Green Capsicum
1 tbsp Ginger Garlic Paste
2tbsp Corn Flour
2 tbsp Oil
½ tsp Chili Sauce
1 tbsp Vinegar
1  tsp Soya Sauce
2 tbsp Tomato Ketchup
Salt & Pepper as taste


Process:

1) Cut chicken in bite size pieces and marinate with salt, black pepper, ginger garlic paste and vinegar for at least for 2 hours.

2) Boil chicken bites in ½ cup of water with lid on medium low flame for about 5-7 minutes. Remove the chicken pieces from water and coat them well with a tbsp of corn flour. In left out water add in soya sauce, ketchup, corn flour and mix well.

3) Heat up a tbsp of oil in flat nonstick skillet and shallow fry the chicken pieces from all the sides till turns golden from all sides. Remove the chicken pieces from the skillet.

4) Heat up a tbsp of oil in the same skillet, once hot then add in onions and capsicum. Stir till turns glossy. Add in chicken pieces and left out chicken water with sauces and corn flour.

5) Stir continuously for about 2 minutes and its ready to serve. Garnish with Spring onions if preferred.

6) Serve hot..Enjoy!

Cold Coffee, This is my kinda cold coffee, I love to have this in summers. This is smooth, rich and frothy coffee perfect for tiring summers when chilled. i am having since childhood, Try this out in this hot summer and i assure you that you will love to be addictive on this. Ingredients:

Serving 2 Person
2 Cup Milk
4 tbsp Hot Water
2 tsp Instant Coffee Powder
Ice Cubes
Sugar as Per Taste


Process:

1) Mix instant coffee powder and sugar well with hot water.

2) Take a mixer, Add in cold milk, ice cubes and coffee, sugar mixture and mix for 2-3 minutes till turns frothy.

3) Serve cold and Enjoy!!

Punjabi Style Fish Curry


Punjabi Style Fish Curry, as being a Punjabi..i just love to prepare Punjabi food. This recipe is one of the most flavor full fish curry recipes. I prefer to serve this dish with tandori roti that too i make on regular gas stove that every body has in there home. I will share that soon, else this can be enjoyed with Rice, Roti or Tortilla.

Ingredients:

1lb Big chunks of Tilapia Fish
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 tsp Minced Green Chili
1 tsp Cumin Seeds
1 cup Tomato Puree
1 tsp Red Chili Powder
½ tsp Sugar
1 tsp Salt
2 tsp Coriander Powder
1 tsp Turmeric Powder
2 tsp Cumin Powder
1 tbsp Oil / Clarified Butter
1 tsp Garam Masala
Cilantro Leaves for garnish


Process:

1)  In a pan, heat the oil on medium flame and once hot add in the Cumin Seeds stir for 1 minute on medium low flame, then add in Ginger, Garlic and green chili.

2) Stir till that turns golden brown, then add in red chili powder, turmeric powder, cumin powder, coriander powder and stir well, add in a tbsp of water and stir well.

3)  Add in tomato puree and cook till oil bubble appears.

4) Add in Fish pieces, salt, sugar and a cup of water, then cook it covered for 10 minutes at medium low flame till fish turns white and flaky.

5) Once done, garnish with Garam Masala and Cilantro...Enjoy with Rice, Chapatis, Parathas or Naan.

Vegetable Raita





Vegetable Raita, This is a perfect yogurt recipe to complete any meal in this hot summers and that too with the goodness of fresh vegetables. Also best way to serve your children requirement for vegetables and that too in raw form. You can change vegetable with your own taste like grated cucumber etc.

Ingredients:

Serving 2 Person
2 Cup Curd/Yogurt
½ Cup Grated Carrot
½ Cup Finely Chopped Celery
½ tsp Cumin Powder
½ tsp Chaat Masala
½ tsp Sugar
½ tsp Green Chili Paste
Chopped Cilantro
Salt and Pepper as Taste


Process:

1) Sieve yogurt with the help of big strainer. Add in carrot, celery, salt, pepper, cumin powder, sugar, chaat masala, green chili paste,cilantro and mix well till well combined.

2) Serve cold and Enjoy!!

Channa Masala (Chickpeas)



Channa Masala, Who doesn't know this in India. This is one of the most favorable dish in India..available in most of the restaurants. This is very simple and full of flavours. Goes well with Rice, Chapati or Tortilla. Try this recipe to make change in your menu with complete flavors.

                     Ingredients:
                       Serving: 4 Persons
1 Cup Overnight Soaked Chickpeas 

2 Cloves
1 Big Onion Chopped
1 Big Tomato Puree
1 tsp Cumin Seeds
1 tsp Coriander Powder

1 tsp Turmeric Powder
1 tbsp Channa/Rajma Masala

1 tsp Ginger Garlic Paste
1 tsp Minced Green Chili
1 tbsp Oil
Cilantro for Garnish
Salt and Pepper as Taste

Process:
1)     Pressure cook chickpeas with cup water, clove, salt and turmeric till fully cooked i.e. for about half an hour on slaw flame. Heat the Oil in large skillet on medium high heat.
2)     Once Oil is hot, add in Cumin seeds, Green Chilies and Ginger Garlic paste.
3)     Once Ginger Garlic turns brown add onions and saute till turns brown. Then add in tomatoes and stir continuously till oil separates. Add in Coriander Powder, Channa Masala  and Salt & Pepper. Stir it well.
4)     Then, add in cooked chickpeas and mix well. Stir continuously.
5)     Cook for 10 minutes on low heat with lid on.
6)     Garnish with Cilantro and Serve hot.

Aalu Bonda



Aalu Bonda, is my favorite road side snack. I love to visit Maharashtra to have this authentic vada pav. I just wanted to recreate the same to fulfill my craving..specially in rainy season with a cup of tea. This is spicy and crunchy snack with soft center made of potatoes, this great combination of great flavors just burst in mouth. I hope you guys will try this out and enjoy this amazing snack.

Here comes the Recipe


Ingredients:

2 Cup Boiled Mashed Potatoes
½ tsp Turmeric
1 tsp Mustard Seeds
Oil for Deep Frying
1 tbsp Chopped Cilantro
1 tsp Butter
1 tsp Lime Juice
Salt to taste


For Batter

½ Cup Besan/Chickpea Flour
1 tsp Salt
1 tsp Ginger Garlic Paste
1 tsp Chopped Cilantro
2 tbsp Water


Process:

1)  Heat a tbsp Oil in large skillet on medium high heat, Add in mustard seeds, turmeric powder, red chili powder, mashed potatoes and mix well. Then add in salt, lime juice and mix well. Let the mixture comes to room temperature.

2) Heat the Oil in large skillet on medium high heat to fry vada's. In a Big Bowl add in besan, ginger garlic paste, salt, cilantro and mix well with water to make a paste.

3) Divide potato mixture in medium sized balls and coat them well with besan mixture. Fry the balls till they turns to golden and crispy.

Enjoy with a cup of tea...

Rajma Masala (Red Beans)


Rajma Masala, Who doesn't know this in India. This is one of the most favorable dish in India..available in most of the restaurants. This is very simple and full of flavours. Goes well with Rice, Chapati or Tortilla. Try this recipe to make change in your menu with complete flavors.

                     Ingredients:
                       Serving: 4 Persons
1 Cup Overnight Soaked Black Beans 
1 Big Onion Chopped
1 Big Tomato Puree
1 tsp Cumin Seeds
1 tsp Coriander Powder

1 tsp Turmeric Powder
1 tbsp Channa/Rajma Masala

1 tsp Ginger Garlic Paste
1 tsp Minced Green Chili
1 tbsp Oil
Cilantro for Garnish
Salt and Pepper as Taste

Process:

Ginger Green Chili Pickle



Ginger Green Chili Pickle, is for all my friends who loves to eat spicy food. This goes well in summers as a pickle with all kinda food. I am eating this since childhood. I hope you will also give this one a try and let me know your comments.

Here comes the Recipe

Ingredients:

½ Cup Thinly Sliced Ginger
  ½ Cup Green Chili Chopped
½  tsp Salt
1 tbsp Lime Juice


Process:

1) Mix Ginger, Green Chili, Salt and Lime juice in a bowl. Mix well and leave that in room temperature in a tight container for at least 2 days. 

2) Then after store at cool place to keep it fresh...Enjoy!

Healthy Banana Walnut Bread





Healthy Banana Walnut Bread, This is my all time favorite bread, so just wanted to prepare in a healthy way to have it when i would like to have. Then i tried this recipe and didn't compromise in taste. Its as delicious as its suppose to be and that is because of the richness of banana's. I just like the soft banana texture with flavor of nuts. It just melts in mouth.

Here comes the Recipe


Ingredients:

1 Cup All Purpose Flour/Maida
1 Cup Whole Wheat Flour
¼ Cup of Unsalted Butter at room temperature
2 Ripe Bananas, lightly mashed
½ tsp Cinnamon Powder
½ tsp Baking Powder
1 tsp Baking Soda
1 Cup Sugar
1 tsp Salt
2 Eggs
½ Cup Low Fat Yogurt/Curd
½ tsp Vanilla Extract
½ Cup Chopped Walnuts


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F . Grease the loaf shaped pan.

2) Take a bowl sieve together the both kinda flour's, cinnamon, baking powder, baking soda and salt and set that aside.

3) In a bowl cream together the butter and sugar till the mixture is light and fluffy. Then add eggs and vanilla extract. Beat that mixture till everything combines.

4) Then add dry ingredients and curd to the wet mixture and beat till everything combines. Toss the batter with Walnuts.

5) Pour batter into the pan and bake for 55 minutes to 1 hour.

6) After cake baked, let that cool for 10-15 mins and Enjoy the bite of heaven.


Tips:

3) This Cake/Bread best eaten little warm with butter and maple syrup mix applied on the slice.

4) Take ripped banana for the best flavor.
