Ingredients:
Papdi :
1 Cup Maida/All Purpose Flour
1 tbsp Oil
½ tsp Carom Seeds/Ajwain
¼ Cup Water
½ tsp Salt
Oil for Deep Frying
Toping:
½ Cup Boiled Chopped Potato
¼ Cup Chopped Onion
¼ Cup Chopped Tomato
¼ tsp Salt
½ Cup Sev
¼ tsp Red Chili Powder
1 tbsp Cilantro Mint Chutney
1 tbsp Tamarind Chutney
1 tbsp Curd
Cilantro for Garnish
Process:
1) Take a big bowl, Add in All Purpose Flour, Carom Seeds, Salt, Oil and mix well. Kneed by adding water to the flour slowly and prepare little tough dough. Cover and let the dough rest or 15 mins.
2) After 15 minutes, Kneed the dough again and make roll the dough to make a thin sheet, Then cut with a round/ rectangular shaped cutter. Pinch then with knife or fork so as they wont puff up while frying.
3) Fry them on Medium low flame to make them crisp. Fry till the bubbles goes away in oil while frying.
4) Put papdi's over the plate so as they wont over lap on each other. Put chopped potato on each of them follows by Chopped Onion, Chopped Tomato, Cilantro Mint Chutney, Tamarind Chutney, Curd.
5) At last sprinkle salt and red chili powder. Garnish with Sev and Cilantro...Enjoy!
Tips:
1) Assemble everything together just before serving.
2) Can make use of Baked Tortilla instead of Papdi for giving this recipe a healthy twist.
