Kulcha (Yeast Free)


Kulcha, this is something people buy from market if they make "Matar kulcha" at home, but , I decided to make myself. I know, its a bit of the work behind making bread at home but, trust me the fresh bread is no where near to the market brought bread. So, please try this recipe and lemme know how you liked it.

Here comes the Recipe


Ingredients:

1½ Cup All Purpose Flour/ Maida
½ Cup Yourt
1 tsp Baking Powder
1 tsp Baking Soda
1 Tbsp Minced Garlic/Garlic Powder
1 tsp Sugar
1 tsp Salt
1 tbsp Lemon juice
½ Cup Lukewarm Water
Butter for Garnish
Chopped Coriander for Garnish


Process:

**Tools Used: Bowl, Flat Pan.

1) Take a bowl with flour in and add baking powder, baking soda, sugar, salt and mix well.  Then add in curd and mix softly with hands. Then slowly add in water to just combine the flour. Don't kneed the dough and just try to make a a lump of dough.

2) Now add in lemon juice to the dough and try to mix in the dough.

3) Cover the dough and let it rest for at-least four hour. Then after you will observe the dough turns double i.e fermented. Now make equal size round balls.

4) Now roll the balls with rolling pin to make any shape you like with the help of dry flour then apply mincced garlic and coriander leaves over that.

5) Heat up the non stick pan on medium high flame. Cook naan over the pan. You will observe the naan fluff up then its the time to flip that and cook from the other side too.

Apply butter over that and Enjoy!!

Crusty Orange Cake



Crusty Orange Cake, this is such a basic and wonderful recipe with the freshness of orange and crunchy crust. This is very playful recipe ...can be mold to any of your ideas. This is just my version of making orange cake...this is perfect just to celebrate any special occasion..Hope you all would try this and enjoy as we did...


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½  Cup Sugar
½ Cup Butter
2 Eggs
1 tsp of Vanilla
1 tsp Baking Powder
1/3 Cup Sour Cream
¼ tsp Orange Zest
1/3 Cup Orange Juice
¼ tsp of Salt

Crust:
2 tsp Vanilla Sugar
¼ tsp Orange Zest

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Grease a round pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and sugar until the mixture gets fluffy ,then add eggs one at a time and beat till the mixture gets lite and fluffy. Add vanilla extract and Sour Cream, mix well.

4) Add flour mixture into wet batter slowly.

5) Pour batter in cake tin. Mix together vanilla sugar and orange zest. Sprinkle this over the top of the cake batter. Bake for 25-30 mins.

6) After cake baked, let that cool for at least an hour.

Tips:

1) Don't over mix the batter.

2) Avoid Salt if using Salted Butter.

3) Sour Cream can be replaced with Curd.

4) All the ingredients should be at room temperature.

Chili Tomato Chutney




Here's the hot and sour Chutney with the freshness of Mint and Cilantro goes well with Paranths, Samosa or any type of Snacks/Starters.

Here comes the Recipe


Ingredients:

1 Cup Cilantro
¼ Cup Mint
1 tbsp Lime Juice
1 Small Onion
1 Big Tomato
2-3 Cloves Garlic
5 Green Chilies
1 tsp Salt


Process:

1) Wash and roughly chop Cilantro, Mint, Onion, Tomato, Garlic and Green Chilies.

2) Put Cilantro, Mint, Onion, Garlic, Tomato, Green Chilies, Salt, Lime Juice in a Mixer and Grind the same till the mixture become like a paste/Coarse as per required to acquire the consistency as desired.

3) Transfer that in a serving bowl...Enjoy!
