Sweet n Spicy Shrimps



Sweet n Spicy Shrimps, is a recipe with beautiful flavors. Its has tangy sweet taste goes great as starter. Its an accidental recipe that came out great. I try to always put some variation in everyday dishes. This recipe is very simple and quite flavorful dish that fills the pallet with amazing flavors. 

Ingredients:

16 Oz Shrimps
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 tsp Soya Sauce
1 tbsp Ketchup
1 tsp Vinegar
1 tbsp Oil
1 tbsp Sugar
½ tsp Cornflour
1 tsp Red Chili Powder
1 tbsp Chili Sauce
Salt and Pepper as taste


Process:

1) In a bowl mix well Soya Sauce, Ketchup, Vinegar, Corn flour, Sugar, Chili Sauce and mix well.

2) In a pan, heat the oil on medium flame and once hot add Ginger and Garlic, saute till turns light brown. Then add in sauce mixture and still continuously.

3) Add in Shrimps and cook on full flame. Stir fry shrimps with sauces until shrimps cooks through. Add in Salt, Pepper and red chili powder, Mix well and serve hot.

Yogurt Pound Cake




Yogurt Pound Cake, This cake is one the most flavor full cake i have made till date. This is extremely soft cake with the flavor of fresh vanilla from vanilla yogurt. Enjoy the slice of this wonderful cake with cranberry sauce. So i hope you will try this and let me know the comments.


Ingredients:

2 ¼ cup of All Purpose Flour/ Maida
1½ Cup Sugar
3/4 Cup Oil
3 Eggs
1 tsp of Vanilla Extract
1 tbsp Baking Powder
3/4 Cup Vanilla Yogurt
¼ tsp of Salt


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf pan with parchment paper and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl mix together the Oil, Vanilla Yogurt and Sugar until the mix well, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract and mix well.

4) Add flour mixture into batter slowly and fold in with spatula.

5) Pour the batter into loaf pan and Bake for 50-55 mins, let that cool for 10-15 mins and Enjoy!


Tips:


1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Cranberry Sauce




Cranberry Sauce, i mean who doesn't like Cranberry that too in the form of sauce with the beauty of natural ingredients. This is a wonderful recipe for kids with no preservatives. I hope you will try this recipe and let me know how you liked.


Here comes the Recipe


Ingredients:

1 lb Cranberry
1 tbsp Lime Juice
1/2 Cup Sugar


Process:

1) Transfer the Cranberries into saucepan. Add Sugar and Lime Juice. Mash Cranberries with the spatula while string.

2) Boil the mixture till sugar melts and then keep stirring that on medium flame till bubbles goes away. Make that mixture to the desired consistency as per personal choice.

3) Store in clean and airtight container.


Tips:

1) Keep the sauce in Refrigerator.

2) Use within two weeks.

Bharwa Shimla Mirch



Bharwa Shimla Mirch, is a side dish goes great with chapati, tortilla. Roasted Bell peppers filled with potatoes that's an amazing combination. I hope you will try them and let me know how you really liked them.


Ingredients:

2 Cup Boiled Mashed Potatoes
1 tsp Red Chili Powder
1 tsp Coriander Powder
1/2 Cup Finely Chopped Onions
1 tsp chopped Green Chili
1 tsp Chaat Masala 
1 tbsp Oil
2-3 Bell Peppers
1 tbsp Chopped Cilantro
Salt to taste


Process:

1)  In a Big Bowl add in mashed potatoes, green chili, salt, red chili powder, chaat masala, coriander powder, onions, cilantro and mix well till combined.

2) Oil bell peppers well and then roast directly on gas stove from all sides till it gets black spots all over.

3) Once bell peppers are good to handle then remove the cap from bell peppers. Add in potato mixture in well till 3/4th filled. Then fix the cap in back again to the bell peppers.

4) Heat the Oil in large skillet on medium high then add in bell peppers. Then cook them with lid on. Cook from all sides till bell pepper is soft enough.

5) Its ready to serve now.

Zucchini French Toast




Zucchini French ToastHere's the healthy and very delicious breakfast recipe. I love to make them on a rainy day. Can be enjoyed with ketchup.


Ingredients:

¼ Cup Chickpea Flour
1 Cup Shredded Zucchini              
2 Eggs Beaten
¼ tsp Baking Powder
4 Bread Slice
Salt and Pepper as taste
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
1 tsp Grated Ginger
2 tbsp Oil


Process:

1) Take a bowl, add in Green Chili, Chopped Cilantro, Chickpea flour(Besan), Baking Powder, Salt, Pepper, Eggs and mix well.

2) Pre heat oil in flat griddle, Spread the batter over one side of bread and place the bread over the griddle upside down i.e. batter side over the griddle first. Flip when cooked and roast the bread from other side.

Instant Bhatura(Tip)


Instant Bhatura, is a great tip i am going to share. This is an instant bhatura recipe that can make anybody's life easy. I have served this to many of my friends in recent days with Channa Masala, Chicken Curry and they loved this. I know its a time saver and a wonderful idea to impress anybody.

Ingredients:

Tortilla
Oil to Fry


Tip: 

Preheat oil to fry and once the oil is hot fry Tortillas till they fluff up or turn light brown in color.

Indian Zucchini Fitters



Indian Zucchini FittersHere's the healthy and very delicious Indian style fitters. I love to make them on a rainy day. Can be enjoyed with Ginger Pickle, Peanut Chutney posted on the blog.


Ingredients:

              1 Cup Shredded Zucchini              
¼ tsp Baking Powder
Salt and Pepper as taste
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
1 tsp Grated Ginger
2 tbsp Oil


Process:

1) Take a bowl, add in Green Chili, Chopped Cilantro,Ginger, Chickpea flour(Besan), Baking Powder, Salt, Pepper and mix well.

2) Preheat oil in flat griddle, with the help of spoon pour in the batter little distance apart. Cook from both sides until turns golden brown.

Enjoy hot!

Fruit Cake



Fruit Cake, This cake is full of nuts and dry fruits. This is super soft cake with the crunch of nuts. I have prepared this cake for Christmas and thats the perfect thing to make for the occasion. Try this and let me know if you liked.


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Butter
3 Eggs
1 tsp of Vanilla
1 tsp Baking Powder
4 tbsp Curd
¼ tsp of Salt
½ Cup Mixed Dry Fruits
Chopped(Walnuts, Fig, Apricots, Almonds, Dry Cranberries)
¼ Cup Sliced Almonds

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf pan with parchment paper and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and Sugar until the mixture gets fluffy, then add eggs one at a time and beat till the mixture gets lite and fluffy, add in vanilla extract and mix well.

4) Add flour mixture into butter batter slowly alternate with curd.

5) Fold nuts into the batter until well combined.

6) Pour the batter into loaf pan with sliced almonds topped over the cake. 

7) Bake for 50-55 mins, let that cool for 10-15 mins and Enjoy!


Tips:


1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) Salted butter can be used, In that case avoid salt.

3) All the ingredients should be at room temperature.
