Pan Roast Chicken


Pan Roast Chicken, is a quick cheating for oven roast or tandoori chicken. I am sure you will not miss the crust you get in oven or tandoor. I would love to here from you guys that how much you liked this one.

Ingredients:

Thinly Sliced Chicken Breast
1 tsp Ginger Garlic Paste
1 tsp Tandoori Masala
1 tsp Red Chili powder
 1 tbsp Oil
1 tsp Salt
½  tsp Chat Masala
½  tsp Lime Juice


Process:


1) Take a large Bowl, Tandoori masala, Ginger Garlic Paste, Red Chili, 1/2 tbsp Oil, Salt, Lime Juice and mix well. Apply that well over chicken breast. Let it rest for atleast an hour.

2) Preheat your 1/2 tbsp oil in a flat pan. Let the pan be really really hot and then put the chicken over the pan and cover the lid. Let the flame be on max. Cook for 2-3 minutes on both sides with lid on.

3) Sprinkle chat masala over and serve with Mint Chutney and Salad.

Pineapple Chutney


Pineapple Chutney, is one of best chutneys i have made. I came up with this recipe because i wanted to use my leftover ripped pineapple. This goes great with parantha or rice. I hope you will make this recipe and let me know how much you liked it.

Ingredients:

1 Cup Chopped riped Pineapple
1 Whole Red Chili
1 tbsp Panch Puran Seeds
(i.e Cumin, Fenugreek, Onion, Fennel, Mustard Seeds)
1 tsp Red Chili Powder
1 tsp Lime Juice
1 tsp Salt
2 tsp Sugar
1 tsp Turmeric Powder
1 tbsp Oil


Process:

1)  In a pan, heat the oil on medium flame and once hot then add in Panch Puran. Stir for few seconds, the add in whole red chili and stir once.

2) Now add in pineapple chuncks, salt, red chili powder, lime juice and stir well. Cook till you get desired texture. I like this a bit chunky. Then add in sugar and stir well.

Madeline Cookies


Madeline Cookies, these are my all time favrt cookies. These are small little cakes. they are my super soft and melting mouth. I wanted to make them since long but i was not able to find madeline pan. You can add any flavor like lime or orange. Here comes the recipe..hope you will enjoy trying and let me know the reviews..

Its My Brother Bday..He is one of the most special person in my life.. Love you Bhai


Ingredients:

1 Cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Melted Butter
½ tsp Lemon Zest
2 Eggs
1 tsp of Vanilla
¼ tsp Baking Powder
¼ tsp of Salt
Powdered Sugar for sprinkle


Process:

**Tools Used: Hand MixerSpatulaWhiskBowl, Madeline pan.

1) Preheat your oven to 350F. Oil madeline pan well to avoid sticking.

2) In a bowl sieve the FlourBaking Powder, Salt and set aside.


3) In another bowl beat eggs well till they are fluffy. Then add in sugar, vanilla, lemon zest, melted butter and mix well. 


4) Add flour mixture into liquid batter slowly and mix well.


5) Devide the batter into madeline pan. Bake for 8-10 mins, let that cool for a while and sprinkle with powdered sugar and Enjoy with a cup of coffee.




Tips:


1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Hara Bhara Kabab


Hara Bhara Kabab, are full of amazing flavors. This is super healthy starter dish..great to rock any party. Great for fussy kids who doesn't eat greens. These are super soft just melts in mouth with crusty top. Goes great as starter with tamarind chutney or coriander mint chutney. I hope you all will try these kabab's and love this.

Ingredients:

250gm Arugula/Spinich Blanched
½ Cup Grean Peas Blanched
½ Cup Beans Blanched
½ Cup Boiled Mashed Potatoes
¼ Cup Cottage Cheese
1 tsp Lime Juice
1 tsp Cumin Powder
½ tsp Red Chili Powder
Bread Crumbs as required
1 tbsp of Salt
¼ Cup Chopped Cilantro
Oil to Shallow Fry
Cashews and Almonds as required


Process:

1) Blend blanched Arugula/Spinich, Peas, Beans with lime juice in blender to make paste. Take that paste in a bowl then add in cottage cheese, mashed potatoes, almonds, salt, red chili powder, cumin powder and mix well.

2) Add in bread crumbs if needed. Now to make kabab take a big lemon size ball of mixture and make any shape then put cashew over the top and press a bit.

3) Take a flat nonstick skittle. Heat the oil in a pan, once oil is hot add in kabab's and fry from both sides till they turn golden brown from both sides.

4)  Now kabab's are ready, Serve with Onion and chutney.

Paneer Kulcha Sandwich


Paneer Kulcha Sandwich, this is a amazing twist to our plain Kulcha's. As i am outside my home country and was missing them badly. I know, it looks like a big task but trust me its not. Goes great with Coriander Chutney or ketchup. So, please try this recipe and lemme know how you liked it.


Ingredients:

2 Kulcha
1 Cup Cottage Cheese
½ tsp Cumin Powder
1 tsp Cumin Seeds
1 Finely Chopped Green Chili
1 Onion Chopped
½ tsp Salt
½  tsp Chat Masala
1 tbsp Chopped Cilantro
1 tsp Oil


Process:


1. Heat oil in a pan on medium high flame, add in cumin seeds and onion. Stir till onion turns translucent. Then add in cottage cheese, cumin powder, green chili, salt, chat masala, cilantro and mix well. 

2. Take 2 kulcha's and then sandwich paneer stuffing in between kulcha's. 

3. Now take few drops of oil and roast sandwich from both sides.

Enjoy with cup of tea....

Methi Matar Malai



Methi Matar Malai, as being a Punjabi..i just love to prepare Punjabi food. This recipe is one of the most flavor full Methi recipes. I prefer to serve this dish with tandori roti that too i make on regular gas stove that every body has in there home. I will share that soon, else this can be enjoyed with Rice, Roti or Tortilla.


Ingredients:

1 lb Chopped Methi
½ Cup Peas
1 tbsp Minced Ginger
1 tbsp Minced Garlic
1 tsp Minced Green Chili
1 tsp Cumin Seeds
2 Medium Onion Puree
1 tsp Red Chili Powder
½ tsp Sugar
1 tsp Salt
2 tsp Cumin Powder
1 tbsp Oil / Clarified Butter
2 tbsp Heavy Cream
1 tsp Garam Masala


Process:

1)  In a pan, heat the oil on medium flame and once hot add in the Cumin Seeds stir for 1 minute on medium low flame, then add in Ginger, Garlic, Onion and green chili.

2) Stir till that turns golden brown, then add blanched Peas, red chili powder, cumin powder, coriander powder and stir well, add in a tbsp of water and stir well.

3) Add in Methi and cook it covered till Methi and peas cooked.

4) Add sugar and heavy cream and garam masala then stir well and its done.

5) Garnish with Garam Masala and Cream...Enjoy with Rice, Chapatis, Parathas or Naan.

Moong Daal Vada (Laddu)



Moong Daal Vada (Laddu), i know delhi people would know how yummy is this one. Here's the delicious Moong Dal laddu's. This is a perfect snack in rainy weather best served with Grated raddish and mint chutney. Hope you would love to try this.


Ingredients:

1 Cup Moong Dal without skin
           2 tbsp Rice Flour              
¼ Cup Water
½ tsp Salt
½ tbsp Chopped Green Chili
3 tbsp Chopped Cilantro
1 tsp Chopped Ginger
1 tsp Cumin Seeds
1 tsp Fennel Seeds
Pinch of Hing
Pinch of Baking Soda
1 Chopped Onion
Oil for Deep Frying
1 tbsp Chopped Curry Leaves
 2 tbsp Chopped Cilantro


Process:

1) Soak Moong Dal for atleast 3 hours.

2) Take a grinder, add in soaked Moong Dal and grind well with water till becomes coarse paste. Add water slowly as per required.

3) Add in Cumin Seeds, Fennel Seeds, Salt, Rice Flour, Chopped Cilantro, Curry Leaves, Onion, Baking Soda, Hing, Ginger and mix well.

4) Heat up Oil for frying on medium flame. Make any shape vada's and fry them till turn golden brown....Enjoy hot!

Custard Cake


Custard Cake, this cake is super soft and melting mouth. This is more like Britannia cake we have in india. You can add any flavor like lime or orange, also you can add some nuts or cherry in the cake to flavor cake. Here comes the recipe..hope you will enjoy trying and let me know the reviews..


Ingredients:

1 ¼ Cup of All Purpose Flour/ Maida
1 Cup Sugar
1 tbsp Custard Powder
½ Cup Oil
¼ Cup Curd
3 Eggs
1 tbsp of Vanilla
1 tsp Baking Powder
¼ tsp of Salt


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F. Line loaf tin with parchment paper and keep it aside.

2) In a bowl sieve the FlourBaking Powder, Salt, Custard Powder and set aside.

3) In another bowl mix together the Oil, Eggs, Vanilla, Curd and Sugar until everything well combined and beat till the mixture gets lite and fluffy.

4) Add flour mixture into liquid batter slowly.

5) Pour the batter into cake tin. Bake for 50-60 mins, let that cool for 10-15 mins and Enjoy with ta cup of coffee.


Tips:

1) Don't over mix the batter while mixing dry ingredients to wet ingredients.

2) All the ingredients should be at room temperature.

Chicken Kabab




Chicken Kabab, are full of amazing flavors. A wonderful friend taught me this recipe and i love her for that. Thanks Sanjukta. These are super soft just melts in mouth with crusty top. Goes great as starter with tamarind chutney or coriander mint chutney.I hope you all will try these kabab's and love this.

Ingredients:

2 Cup Minced Chicken
1 tsp Lime Juice
1 tsp Cumin Powder
½ tsp Red Chili Powder
2 tbsp Ginger Garlic Paste
1 tbsp Garam Masala
2-3 tbsp Bread Crumbs
1 tbsp of Salt
¼ Cup Chopped Cilantro
¼ Cup Chopped Cashews
1 Egg
1/2 Cup Bread Crumbs
Oil to Shallow Fry


Process:

1) Cook Chicken and Ginger Garlic paste in a pan till chicken cooks and dry.

2) Take chicken in a big bowl and salt, cilantro, lime juice, Cashews, Cumin Powder, Garam Masala, Red Chili Powder, 2-3 tbsp bread crumbs and mix well.

3) Now to make kabab take a big lemon size ball of mixture. Take a flat nonstick skittle. Heat the oil in a pan, once oil is hot add in kabab's and fry from both sides till they turn golden brown from both sides.

4)  Now kabab's are ready, Serve with lemon and cilantro.

Paneer Bhatura



Paneer Bhatura, this is a amazing twist to our plain Bhatura. As i am outside my home country and was missing them badly. I know, it looks like a big task but trust me its not. Goes great with Channa Masala posted on my blog. So, please try this recipe and lemme know how you liked it.


Ingredients:

1½ Cup All Purpose Flour/ Maida
1 tbsp Semolina
½ Cup Curd
½ tbsp Active Rise Yeast
½ tbsp Sugar
1 tsp Salt
½ Cup Lukewarm Water
Oil for deep frying

Filling:


1 Cup Cottage Cheese
½ tsp Cumin Powder
1 Finely Chopped Green Chili
½ tsp Salt
½  tsp Chat Masala
1 tbsp Chopped Cilantro 

Process:

1) Take a bowl with flour in and add in Semolina, Active rise yeast, sugar, salt and mix well.  Then add in curd and mix softly with hands. Then slowly add in water to kneed soft dough.

2) Cover the dough and let it rest for an hour. Then after you will observe the dough turns double i.e fermented. Punch dough to remove air from the dough. Then let the dough rest for 10 minutes so that it becomes easy to handle. Now make equal size round balls.

3) Take a bowl add in Paneer, Chat masala, Salt, Green Chili, Cilantro, Cumin powder and mix well. Take dough balls and roll them now put some filling in the middle. Now close the edges like me do for filled paranths.

4) Now roll the balls with rolling pin to make any shape you like with the help of dry flour or the 
authentic way is to make oval shape with the help of hands and oil. 

5) Heat up the oil for frying. Add Bhatura's one at a time. You will observe the bhatura's will fluff up then its the time to flip that and fry from the other side too.

Beetroot Curry



Beetroot Curry, is a wonderful south indian dry dish. This is really eye pleasing with the beautiful color from beetroot and full of health.This recipe is very simple and quite flavorful dish that fills the pallet with amazing flavors. Goes great with Rice and Sambhar. I hope you all will try this out.

Ingredients:

2 Cup Sliced Beetroot
½ tsp Chana Dal
½ tsp Mustard Seeds
½ tsp Turmeric Powder
1 tsp Oil
3-4 Curry Leaves
2 Sliced Green Chili
1 tsp Red Chili Powder
1 tsp Salt
1 Small Onion Sliced


Process:

1)  In a pan, heat the oil on medium flame and once hot add in Mustard seeds and Chana dal. Once Chana dal turns lite brown. Then add in curry leaves and green chilies.

2) Then add in beetroot, salt, red chili powder, coriander powder, turmeric powder and mix well.

3) Stir till beetroot turns a bit soft. turn off the gas stove and cover it for 10 minutes.

Potato Tots




Potato Tots, is one of my favorite tea time snack. These are blast of flavors with crispy and flaky crust. When i made them myself couldn't resist eating them and we wanted more and more. They are crunchy with the burst of flavors. I hope you will try them and let me know how you really liked them.

Ingredients:

1 Cup Boiled Mashed Potatoes/Cottage Cheese
1 Cup Raw Potatoes Grated 
1 tsp Red Chili Powder
2 tbsp Rice Flour/ All Purpose Flour
1/4 Cup Water
1 tsp chopped Green Chili
1 tsp Chaat Masala 
Oil for Deep Frying
1 tbsp Chopped Cilantro
Salt to taste


Process:

1)  In a Big Bowl add in mashed potatoes, green chili, salt, red chili powder, chaat masala, cilantro and mix well till combined. Partially boil grated Potatoes till they slightly soften and mix with above mixture.

2) Make rolls of tots shape and keep them aside. Take a bowl add in flour, water, salt and mix well.

3) Heat the Oil in large skillet on medium high heat to fry tots. 

4) Dip tots into flour batter and fry till they turns golden brown.

5) Enjoy cutlets with Chili Tomato Chutney.

Chilli Garlic Chutney



Chilli Garlic Chutney, Here's the hot and sour Chutney with the spicy red chilli. Goes well with Spring Roll, Samosa or any type of Snacks/Starters.


Ingredients:

6-7 Whole Red Chilli
1/2 tsp Cumin Powder
1 tbsp Lime Juice
2-3 Garlic Cloves
1 tsp Salt


Process:

1) Soak Red Chilli's in half cup lukewarm water for about an hour. 

2) Put Garlic, Lime Juice, Cumin Powder, Salt, Red Chilli's in a Mixer and Grind the same with water from chilli's till the mixture become like a paste/Coarse as per required to acquire the consistency as desired.

3) Transfer that in a serving bowl...Enjoy!

Eggless Chocolate Cake with Chocolate Ganache




Eggless Chocolate Cake with Chocolate Ganache, was a surprise for my friend's birthday. He is very very special for me and this was the best occasion to treat him with this wonderful cake. This Cake is a basic eggless chocolate cake recipe. We can convert this into any kind of flavored cake as per the choice like Fruit or lime cake.


Ingredients:

Chocolate Ganache:
½ Cup Cream
½ Cup Chocolate
¼ tsp Salt
½ tsp Butter


Cake Batter:
1 cup of All Purpose Flour/ Maida
¼ Cocoa Powder
½ Cup Milk
½ Cup Sweetened Condensed Milk
2 tbsp Sugar
1 tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
½ Cup Butter
1 tsp of Vanilla Extract


                                                                                Process:


**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour, cocoa powder, baking powder, baking soda, salt and set aside.

3) In another bowl cream together the sweetened condensed milk and butter until become smooth and well combined ,then add sugar, milk, vanilla and mix well.

4) Add dry ingredients into wet ingredients till every thing gets incorporated.

5) Bake for 30-35 mins.After cake baked, let that cool for 10-15 mins.

6) For Chocolate Ganache heat up the cream just before it starts boiling, add chocolate into the cream and let that rest for 5 mins. After 5 mins mix that well till all the chocolate well combined with the cream then add butter and salt into that and mix well. Now we are ready to glaze that on the top of our cake...and Enjoy!


                                                                             Tips:

1) Don't over mix the batter.

2) All ingredients should be at room temperature.

3) Salted butter can be used, then in that case avoid salt.

Bhatura



Bhatura
, this is something people go out to eat, As i am outside my home country and was missing them badly. Soi i decided to make myself. I know, it looks like a big task but trust me its not. Goes great with Channa Masala posted on my blog. So, please try this recipe and lemme know how you liked it.

Here comes the Recipe

Ingredients:

1½ Cup All Purpose Flour/ Maida
1 tbsp Semolina
½ Cup Curd
½ tbsp Active Rise Yeast
½ tbsp Sugar
1 tsp Salt

authentic way is to make oval shape with the help of hands and oil. 

4) Heat up the oil for frying. Add Bhatura's one at a time. You will observe the bhatura's will fluff up then its the time to flip that and fry from the other side too.

Nimbu Chutney




Nimbu Chutney, I know its a strange name..as we have always heard about Nimbu Aachar etc but never heard about nimbu chutney. But trust me its a burst of flavors with with grainy texture. Try this is fitters or pranthas. Let me know how you like this one.

Ingredients:

250 gm Lemons
250 gm Sugar
1 tsp Red Chili Powder
1 tsp Cumin Powder
1 tsp Salt
1 tsp Rock Salt
Pinch of Asafetida

Process:

1) Wash lemons well and let them dry completely. Then chop lemon into rough pieces. Remove the seeds.

2) Put chopped lemons, salt, rock salt, asafetida, cumin powder, red chili powder in a blender and pulse that till you get desired or grainy texture. Then add in sugar and mix well.

3) Put that in airtight glass jar that needs to be moisture free and keep that in sunlight for 2 days.

Kulcha (Yeast Free)


Kulcha, this is something people buy from market if they make "Matar kulcha" at home, but , I decided to make myself. I know, its a bit of the work behind making bread at home but, trust me the fresh bread is no where near to the market brought bread. So, please try this recipe and lemme know how you liked it.

Here comes the Recipe


Ingredients:

1½ Cup All Purpose Flour/ Maida
½ Cup Yourt
1 tsp Baking Powder
1 tsp Baking Soda
1 Tbsp Minced Garlic/Garlic Powder
1 tsp Sugar
1 tsp Salt
1 tbsp Lemon juice
½ Cup Lukewarm Water
Butter for Garnish
Chopped Coriander for Garnish


Process:

**Tools Used: Bowl, Flat Pan.

1) Take a bowl with flour in and add baking powder, baking soda, sugar, salt and mix well.  Then add in curd and mix softly with hands. Then slowly add in water to just combine the flour. Don't kneed the dough and just try to make a a lump of dough.

2) Now add in lemon juice to the dough and try to mix in the dough.

3) Cover the dough and let it rest for at-least four hour. Then after you will observe the dough turns double i.e fermented. Now make equal size round balls.

4) Now roll the balls with rolling pin to make any shape you like with the help of dry flour then apply mincced garlic and coriander leaves over that.

5) Heat up the non stick pan on medium high flame. Cook naan over the pan. You will observe the naan fluff up then its the time to flip that and cook from the other side too.

Apply butter over that and Enjoy!!

Crusty Orange Cake



Crusty Orange Cake, this is such a basic and wonderful recipe with the freshness of orange and crunchy crust. This is very playful recipe ...can be mold to any of your ideas. This is just my version of making orange cake...this is perfect just to celebrate any special occasion..Hope you all would try this and enjoy as we did...


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½  Cup Sugar
½ Cup Butter
2 Eggs
1 tsp of Vanilla
1 tsp Baking Powder
1/3 Cup Sour Cream
¼ tsp Orange Zest
1/3 Cup Orange Juice
¼ tsp of Salt

Crust:
2 tsp Vanilla Sugar
¼ tsp Orange Zest

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Grease a round pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour, Baking Powder, Salt and set aside.

3) In another bowl cream together the Butter and sugar until the mixture gets fluffy ,then add eggs one at a time and beat till the mixture gets lite and fluffy. Add vanilla extract and Sour Cream, mix well.

4) Add flour mixture into wet batter slowly.

5) Pour batter in cake tin. Mix together vanilla sugar and orange zest. Sprinkle this over the top of the cake batter. Bake for 25-30 mins.

6) After cake baked, let that cool for at least an hour.

Tips:

1) Don't over mix the batter.

2) Avoid Salt if using Salted Butter.

3) Sour Cream can be replaced with Curd.

4) All the ingredients should be at room temperature.

Chili Tomato Chutney




Here's the hot and sour Chutney with the freshness of Mint and Cilantro goes well with Paranths, Samosa or any type of Snacks/Starters.

Ingredients:

1 Cup Cilantro
¼ Cup Mint
1 tbsp Lime Juice
1 Small Onion
1 Big Tomato
2-3 Cloves Garlic
5 Green Chilies
1 tsp Salt


Process:

1) Wash and roughly chop Cilantro, Mint, Onion, Tomato, Garlic and Green Chilies.

2) Put Cilantro, Mint, Onion, Garlic, Tomato, Green Chilies, Salt, Lime Juice in a Mixer and Grind the same till the mixture become like a paste/Coarse as per required to acquire the consistency as desired.

3) Transfer that in a serving bowl...Enjoy!
