Cheesecake Brownie



Cheesecake Brownie, is a combination of fudge brownie with soft cheesecake melts in mouth.


Ingredients:

Cheesecake
¼ cup of Cream Cheese
2 tbsp Sugar
1 Egg York



Brownie Ingredients:


2/3 cup of All Purpose Flour/ Maida
2/3 cup of Choco Chips
½ Cup Sugar
¼ Cup Butter
2 Eggs
½ tsp of Vanilla
1 Tbsp Choco Powder
¼ tsp of Salt



Process:



**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Muffin Pan.

1) Preheat your oven to 350F. Grease your pan with butter or use muffin molds and line the bottom with butter paper.

2) In a bowl sieve the flour, cocoa powder, Salt and set aside.

3) In another bowl melt choco chips and butter. Add eggs and sugar mixture into the bowl.

4) Add flour mixture into wet batter slowly until everything well incorporated.

5) Fill the muffin molds about half with brownie mixture.

6) In another bowl to make cheesecake mixture by adding cheesecake ingredients and mix well. Pour ½ tsp over the brownie mixture in muffin molds.

7) Bake for 20-25 mins.After muffins baked, let that cool for 10-15 mins and Enjoy!

Chai Tea Muffins




Chai Tea Muffins, are very moist with the flavor of natural spices and nuts.


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½ Cup Sugar
½ Cup Butter
2 Eggs
1 tbsp of Vanilla
½ tsp Baking Soda
1 tsp Baking Powder
3 tbsp Curd
¼ tsp of Salt


Chai tea Toping:

2 tsp Chai Masala
3 tbsp Brown Sugar
¼ Cup Chopped Walnuts
1 tbsp Maida
1 tbsp Soften Butter


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Muffin Pan.

1) Preheat your oven to 350F. Line muffin tin with muffin liners and keep it aside.

2) In a bowl sieve the flour, Baking Powder, Baking Soda, Salt and set aside.

3) In another bowl cream together the Butter and sugar until the mixture gets fluffy ,then add eggs one at a time and beat till the mixture gets lite and  fluffy, then  add vanilla extract.

4) Add flour mixture into wet batter slowly alternate with curd.

5) Pour the batter into muffin tin. This batter makes 12 muffins.

6) Mix Chai Masala, Brown Sugar, Walnuts, Maida, Butter and make crumbly mixture. Sprinkle the mix over muffins.

7) Bake for 20-25 mins.After muffins baked, let that cool for 10-15 mins and Enjoy!


Tips:

1) Don't over mix the batter.

Cinnamon Rolls



Cinnamon Rolls, are very soft and flaky buns with fragrance and taste of cinnamon.


Ingredients:

1 cup of All Purpose Flour/ Maida
¼ Cup Sugar
¼ Cup Butter
¼ Cup Brown Sugar
¼ Cup walnut
½ tbsp Cinnamon Powder
½ tbsp Dried Yeast
½ Cup Milk
¼ tsp of Salt
½ tbsp Baking Powder
1 tbsp of Vanilla

Glaze:

½ Cup Icing Sugar
1 tbsp Melted Butter
½ tsp vanilla
1 tbsp milk

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper and set aside.

2) In a bowl have warm milk, yeast and 1 tbsp sugar. mix well, cover and set that aside for 5 mins till you see froth over that. Then add butter and vanilla and mix well.

3) In another bowl sieve floor, baking powder, salt. Add sugar and yeast mixture and mix well. Then kneed the dough with floor for 5-6 mins till the dough become smooth and doesn't stick to the hands anymore.

4) Take another bowl and grease that with butter and let the dough rise in the bowl with lid in some warm place for 1 hour. Once the dough doubled in size then roll that in thin layer, spread cinnamon powder, brown sugar and chopped walnuts over the and roll in round motion. Cut that into equal parts .

5) In the baking tray set the rolls over the tray. Maintain some gaps and with the layered side upwards. Cover the baking tray with lid and leave that for aside for 1 hour they will rise again. Then bake the buns for 20-25 mins.

6) For Glaze mix melted butter, icing sugar and milk little by little till we get smooth glaze. Rub the glaze over the buns and Enjoy them hot...



Tips:


1) Glaze should be a bit thick

2) Yeast should not be very old.

Chocolate Strawberry Crumb Bars



Chocolate Strawberry Crumb Bars, This is a very very delicious, buttery, flaky Bars with sense of chocolate.

Ingredients:

1 cup of All Purpose Flour/ Maida
½ Cup Sweetened Condensed Milk
½ Cup Butter
¼ Cup Brown Sugar
¼ Cup Cherry
¼ tsp of Salt
¼ Cup Strawberry Jam



Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper and set aside.

2) In a bowl sieve the flour, salt and set aside.

3) In another bowl microwave sweetened condensed milk and half cup choco chips for 2 mins and set that aside for 5 mins, then mix well.

4) Take another bowl cream together butter and brown sugar then add flour and salt mixture. Combine that well until you have crumbly mixture.

5) Spread the 3/4th of the mixture and flattened that well over the baking tray and bake for 10-12 mins.. Then after spread chocolate mixture over baked crust and spread left over choco chips, put little by little jam over and crumbs of remaining mixture, Bake for 30-35 mins..until the center looks set.... let that sit for 1 hour ...Cut into square pieces.... Enjoy...



Tips:


1) Butter should be at room temperature.

2) Don't cut the bars in hot state.

Eggless Pineapple Cake



Eggless Pineapple Cake, This is a very soft cake with full of freshness comes from pineapple juice.


Ingredients:

1 ¼ cup of All Purpose Flour/ Maida
½ Cup Sweetened Condensed Milk
½ Cup Canned Crushed Pineapple
½ Cup Pineapple Juice
1 tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
¼ tsp of Cinnamon
¼ Cup Refined Oil



Process:



1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour, baking powder, baking soda, salt, cinnamon and set aside.

3) In another bowl cream together the sweetened condensed milk and oil until become smooth and well combined ,then add pineapple juice and crushed pineapple and mix well.

4) Add dry ingredients into wet ingredients till every thing gets incorporated.

5) Bake for 30-35 mins.After cake baked, let that cool for 10-15 mins and Enjoy!

Basic Eggless Sponge Cake with Chocolate Ganache


Basic Eggless Sponge Cake with Chocolate GanacheThis is a very basic eggless sponge cake recipe. We can convert this into any kink of flavored cake as per the choice like chocolate or lime cake.


Ingredients:

Chocolate Ganache:
½ Cup Cream
½ Cup Chocolate
¼ tsp Salt
½ tsp Butter


Cake Batter:
1 ¼ cup of All Purpose Flour/ Maida
½ Cup Milk
½ Cup Sweetened Condensed Milk
2 tbsp Sugar
1 tsp of Baking Powder
½ tsp of Baking Soda
½ tsp Vinegar
¼ tsp of Salt
½ Cup Butter
1 tsp of Vanilla Extract


                                                                                Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cake Pan.

3) In another bowl cream together the sweetened condensed milk and butter until become smooth and well combined ,then add sugar, milk, vanilla, vinegar and mix well.

4) Add dry ingredients into wet ingredients till every thing gets incorporated.

5) Bake for 30-35 mins.After cake baked, let that cool for 10-15 mins.

6) For Chocolate Ganache heat up the cream just before it starts boiling, add chocolate into the cream and let that rest for 5 mins. After 5 mins mix that well till all the chocolate well combined with the cream then add butter and salt into that and mix well. Now we are ready to glaze that on the top of our cake...and Enjoy!

1) Don't over mix the batter.

2) All ingredients should be at room temperature.

3) Salted butter can be used, then in that case avoid salt.

4) We can add choco chips in the batter to make that choco chip cake. Just coat choco chips with floor before adding into the batter.

Eggless Marble Cake Using Curd


Eggless Marble Cake Using CurdThis cake looks creative and you can go as per your imagination to create magic every time...Its a great combination of different flavors bring together with innovation.



Ingredients:

1 ½ cup of All Purpose Flour/ Maida
3/4 Cup Sugar
1 cup Curd
1¼ tsp of Baking Powder
½ tsp of Baking Soda
¼ tsp of Salt
½ Cup Refined Oil
½ tsp of Vanilla Extract
½ tbsp Cocoa powder



Process:


1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper.

2) In a bowl sieve the flour and set aside.

3) In another bowl cream together the curd and sugar until sugar is completely dissolves in the curd ,then add baking powder and baking soda with curd and sugar mixture and let that rest for 3-5 mins. You will find bubbles appear.

4) In above mixture add vanilla extract and refined oil and mix well, then add little maida into the batter at a time till every thing gets incorporated.

5) Add cocoa powder in ¼th batter and mix well. Now pour the batter in alternate sequence. Like first as a base add half of the basic batter then add a layer of chocolate batter and then add basic batter on the top.

6) Bake for 25-30 mins.After cake baked, let that cool for 10-15 mins and Enjoy!

Milk Cake with Homemade Cottage Cheese



Milk Cake with Homemade Cottage CheeseThis is a creamy cake with goodness of homemade cottage cheese. Inside of the cake is soft and outside is crusty...



Ingredients:

400gm Homemade cottage cheese
½ cup Sugar
¼ cup of Suji/Semolina
½ tsp Cinnamon Powder
1 tbsp Raisins
1 tbsp Cashews


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cookie Pan.

1) Preheat your oven to 450F. Grease your pan and Set aside.

2) Smooth-en cottage cheese with hands or in food processor to attain creamy texture without any lumps.

3) In a bowl mix together suji, cottage cheese, sugar, raisins, cashews and cinnamon. Mix well till everything combines and sugar dissolves.

4) Pour batter into the pan and bake for 40-50 minutes till edges become golden.

5) Cut the cake in bite size pieces and Enjoy...



Tips:

1) Best served warm

2) Texture of the cottage cheese should be creamy.

Caramel Mango Upside Down Cake


Caramel Mango Upside Down CakeThis is one of the most beautiful cake i have made so far...Its a great combination of Caramelize mango with fluffy spiced cake.



Ingredients:

For the caramel
¼ cup of Butter
2/3 cup of Brown Sugar



Cake Batter:

1 Large Mango Not Fully Ripped
1 tsp Lemon Juice
1 1/3 cup of All Purpose Flour/ Maida
1 tsp of Cinnamon
1 tsp of Baking Powder
¼ tsp of Salt
½ tsp of Orange Zest
½ Cup Butter at Room Temperature
1/8 tsp of Fresh Grated Nutmeg
2 Eggs
½ tsp of Vanilla Extract
½ cup of Milk
1 Cup Sugar



Process:


**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Cake Pan.

1) Preheat your oven to 350F. Grease your pan with butter and line the bottom with butter paper.

2) In a small saucepan, melt the ¼ cup of butter and add the brown sugar. Cook till the mixture comes to boil.

3) Pour the butter sugar mixture in the pan and arrange mango slices over the top making in a decorative manner. Set aside.

4) In a bowl sieve together the flour, salt, baking powder, cinnamon and nutmeg and set aside.

5) In another bowl cream together the ½ cup of butter and sugar, then add eggs, vanilla and orange zest and mix until creamy and pale yellow in color.

6) Add half of the dry ingredients and half of the milk alternatively and mix to combine until everything is well incorporated and pour this batter over the mango's making sure to spread it evenly.

7) Bake for 55 to 60 minutes in the middle rack and let cool for 15 minutes.

8) Place a plate upside down on the pan and turn plate and pan over to invert the cake right side up on the plate. Dust with powdered sugar and Enjoy!



Tips:

1) Don't over mix the batter.

2) Don't use ripped mango.

3) Salted butter can be used, then in that case avoid salt.

4) All the ingredients should be at room temperature.

5) Dust powdered sugar when cake is completely cool otherwise sugar will melt over the top and won't serve the purpose of looking great.

Banana Walnut Raisin Bread



This is my all time favroute Cake/Bread. I just like the soft banana texture with flavor of nuts. It just melts in mouth.

Here comes the Recipe


Ingredients:

1 ¾ Cup All Purpose Flour/Maida
½ Cup of Unsalted Butter at room temperature
3 Ripe Bananas, lightly mashed
½ tsp Cinnamon Powder
1 tsp Baking Powder
1 tsp Baking Soda
1 Cup Sugar
1 tsp Salt
2 Eggs
2 tbsp Milk
½ tsp Vanilla Extract
½ Cup Chopped Walnuts
1/4 Cup Raisin


Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, Loaf Pan.

1) Preheat your oven to 350F . Grease the loaf shaped pan.

2) Take a bowl sieve together the flour, cinnamon, baking powder, baking soda and salt and  set that aside.

3) In a bowl cream together the butter and sugar till the mixture is light and fluffy. Then add eggs and vanilla extract. Beat that mixture till everything combines.

4) Then add dry ingredients and milk to the wet mixture and beat till everything combines. Toss the batter with Walnuts and Raisin.

5) Pour batter into the pan and bake for 55 minutes to 1 hour.

6) After cake baked, let that cool for 10-15 mins and Enjoy the bite of heaven.


Tips:

1) Don't over mix the batter.

2) Take fresh Walnuts.

3) This Cake/Bread best eaten little warm with butter and maple syrup mix applied on the slice.

4) Take ripped banana for the best flavor.

5) Salted butter can be used, then in that case avoid salt.

6) All the ingredients should be at room temperature.

My Version of making Eggless Brownie


I got this wonderful recipe of Chocolate Brownie for those who don't eat egg and thought of improvising it a little...


Ingredients:
  • 1 cup of All Purpose Flour
  • 1 tsp of Baking Powder
  • ¼ tsp of Salt
  • 1/4 Cup Vegetable oil
  • ½ tsp of Vanilla Extract
  • 50gm Cottage Cheese
  • ½ Cup Milk
  • 1 cup Sugar
  • 2 Tbsp Cocco Powder
  • 1 tsp Instant Coffee Powder
  • 1-2 Tbsp Curd
  • 1/4 cup Chopped Walnut and Choco-Chips Mix.

Process:

**Tools Used: Hand Mixer, Spatula, Whisk, Bowl, CakePan.

1) Preheat your oven to 350 degree F. Grease one 8 by 8 square pan with non-stick cooking spray and cover the bottom with parchment paper.

2) In a small bowl mix flour, salt and baking powder properly and keep this amalgamate aside.

3) Coat Walnuts and Choco chips with 1 tbsp of Flour, so that you find them evenly distributed through out the brownie.

4) Take a large bowl, Mix in Cottage cheese, Milk, Sugar, Vanilla Extract and Oil.

5) Add in the dry ingredients & mix them well until everything is well incorporated. Add curd if batter is very thick or is unable to assimilate the ingredients properly. 

6) Then, fold in chocolate chips & chopped walnuts into the batter. Pour the batter in baking pan.  Sprinkle some walnuts and choco chips on the top.

7) Bake for 45 to 50 minutes and let it cool for 15 minutes.

8) Place a portion of Brownie on platter and preferably, serve it with Vanilla ice-cream scoop & chocolate sauce atop and Enjoy!

2) Batter should be thick enough.
